What matters technically

  • Disperse pectin with sugar before adding to liquid.
  • Follow the supplier's activation conditions.
  • Choose pectin according to the formulation and desired reversibility.

Common mistakes

  • Replacing NH or yellow pectin gram-for-gram
  • Adding pectin directly and creating lumps
  • Ignoring calcium and solids in the recipe
