This mango and passion fruit gel is the bright, clean-cut fruit layer in my Chocolate Tonka & Passion Fruit Cake. Mango supplies ripe fruit body and a rounded texture; passion fruit supplies the acidity that lifts the dark chocolate and tonka mousse. The objective is not a firm jelly. I want a soft, juicy insert that cuts neatly when cold and melts into the crémeux and mousse on the palate.

I selected the formula below from Valrhona's professional Atacama Pâques entremets by David Briand, Meilleur Ouvrier de France 2019. It is a published reference formula, not a proprietary Tanya Novak formula. I chose it after comparing its composition and method with professional fruit-insert guidance from Les vergers Boiron and technical specifications for Pectin NH from Sosa.

  • 35 g very cold water for blooming the gelatin

Formula accounting

The fruit ratio is approximately 64% mango to 36% passion fruit. Relative to the 1,190 g of fruit, the formula contains about 32.4% sugar, 1.26% Pectin NH and 0.59% dry gelatin. These percentages are useful for understanding the system, but they are not permission to change one ingredient independently.

Valrhona prints a total weight of 1,597 g for the five listed ingredients. Its method then instructs the chef to bloom the gelatin in five times its weight of water. Once the 35 g bloom water is counted, the practical batch weighs approximately 1,632 g before process losses. I include that water explicitly so the formula can be repeated and audited.

Why I selected this formula

The Valrhona reference is unusually well matched to this application: it uses the exact mango-passion fruit combination, combines Pectin NH with gelatin, and is produced as a frozen component in a professional entremets. The Boiron mango insert confirms the core method of combining NH pectin with sugar, adding it to heated purée and boiling to hydrate it. Sosa identifies its Pectin NH as an amidated low-methoxyl pectin with hot hydration, high freeze resistance and thermoreversible behaviour.

The sources do not use identical percentages because their products and intended textures differ. I therefore did not average them. I kept Valrhona's complete formula and used Boiron and Sosa to validate the method and ingredient behaviour. This is safer than constructing an apparently precise recipe from unrelated averages.

What each ingredient does

  • Mango purée gives body, fibre, sweetness and a broad ripe-fruit flavour. Use a consistent professional purée rather than changing between fresh mangoes of unknown ripeness.
  • Passion fruit purée brings sharp acidity and aroma. It keeps the chocolate composition vivid rather than heavy.
  • Caster sugar sweetens, adds dissolved solids and changes water availability. It is part of the tested gel system, not a decorative quantity.
  • Pectin NH gives the fruit phase a tender, clean-cut network and supports freeze-thaw performance. The exact commercial pectin matters.
  • Gelatin adds elastic melt and reinforces the insert without making the fruit feel brittle when the cake is served chilled.
  • Bloom water hydrates the gelatin evenly and remains part of the finished formula. It must not disappear from the production record.

Equipment

  • Accurate scale capable of weighing small hydrocolloid quantities
  • Saucepan, whisk and heatproof spatula
  • Digital probe thermometer
  • Small metal insert ring lined with acetate
  • Flat freezer-safe tray with acetate or a guitar sheet
  • Blast freezer or freezer capable of solidly freezing the insert

1. Prepare the metal ring

Place the smaller metal insert ring on a perfectly flat tray lined with acetate or a guitar sheet. Line the side if the production setup requires it. The ring must be level and leak-resistant before the hot fruit mixture is ready because the pectin begins organising as the temperature falls.

For the Chocolate Tonka cake, this gel belongs in the smaller frozen insert above the milk chocolate crémeux and chocolate sponge. I use an even layer of approximately 10 mm as the architectural target. The exact mass depends on the ring diameter, so I validate and record it for the mould actually used.

2. Bloom the gelatin

Sprinkle 7 g powdered gelatin evenly over 35 g very cold water, or hydrate the specified sheet gelatin in plenty of cold water according to its product instructions. Allow it to hydrate fully. If the Bloom strength or gelatin format changes, the result is no longer an exact reproduction of the reference formula.

Keep the hydrated gelatin ready beside the stove. It is added only after the fruit-and-pectin mixture has boiled, so it dissolves in residual heat without being subjected to unnecessary prolonged boiling.

3. Premix the sugar and Pectin NH

Whisk the Pectin NH thoroughly through the caster sugar before either ingredient touches the fruit. This dry premix separates the very fine pectin particles. If Pectin NH is tipped directly into wet purée, the outer surface can hydrate immediately and trap dry powder inside stubborn lumps.

Use the exact Pectin NH specified by the tested formula. Ordinary jam pectin, Pectin Jaune, Pectin X58, agar and gelatin do not behave as gram-for-gram substitutes. A change of pectin requires a new formula and a freeze-thaw test.

4. Warm the fruit to 40°C / 104°F

Combine the mango and passion fruit purées and heat them with steady stirring to 40°C / 104°F. Warming reduces viscosity and prepares the liquid phase for even dispersion. Measure the purées before heating so evaporation does not silently alter the ratio.

At this stage the purée should be uniform and fluid, without scorched material on the base of the saucepan. Moderate heat gives enough time to distribute the pectin cleanly.

5. Disperse and boil

With the fruit moving continuously, sprinkle in the sugar-and-pectin mixture gradually rather than adding it as one mound. Whisk across the complete pan, including the corners, until no dry pockets remain. Then bring the mixture to a full boil as directed by Valrhona.

The boil is a functional step for hydration, not merely a temperature landmark. Stop once the mixture has reached a complete boil and is homogeneous; uncontrolled evaporation would concentrate sugar and fruit solids beyond the published formula.

6. Add the bloomed gelatin

Remove the fruit mixture from direct heat and add the fully hydrated gelatin. Stir until it has dissolved completely and the gel base is uniform. Avoid vigorous whisking that draws air into the mixture, because bubbles remain visible in a thin insert and can weaken the clean visual line of the slice.

Do not add the gelatin before the required pectin boil. The two hydrocolloids have different handling requirements: the pectin must disperse and hydrate in the hot fruit phase, while the pre-hydrated gelatin only needs to melt evenly into it.

7. Cast and freeze

Pour the gel promptly into the prepared metal ring, over the already frozen crémeux-and-sponge insert when building this cake. Spread it to an even layer without repeatedly disturbing the surface. Freeze the complete insert until it is solid enough to unmould without bending or compressing its layers.

In final upside-down assembly, the frozen insert enters the dark chocolate and tonka mousse with the fruit-gel side facing down. The finished top-to-bottom sequence is mousse, mango-passion fruit gel, milk chocolate crémeux, chocolate sponge and Feuilletine crunch. Freezing is a production operation; the finished cake is thawed under refrigeration before service.

Texture, flavour and serving temperature

Properly made, the gel is soft-set, juicy and clean-cut rather than rubbery. Mango creates a rounded middle note and passion fruit supplies the quick acidic lift. Between dark chocolate-tonka mousse and milk chocolate crémeux, that acidity interrupts the accumulation of fat and sweetness and makes the next chocolate note feel clearer.

I serve the complete cake chilled for the best experience. At that temperature the fruit layer remains distinct, the crémeux is silky, the mousse holds a fine structure and the Feuilletine stays crisp. As a bite warms in the mouth, the gel softens and its aroma expands into the chocolate layers. The cake should not be served frozen solid.

Can I reduce the sugar?

Not as a casual one-step edit. This formula uses substantially more sugar than some refrigerated, pectin-only fruit inserts, but it is also a different system intended for a different professional application. Sugar changes soluble solids, water availability, sweetness, freezing behaviour and the conditions in which the chosen Pectin NH works.

If I want a lower-sugar version, I treat it as a separate development project. I keep the purée brand and pectin product constant, change one controlled variable at a time, measure pH and soluble solids where possible, and evaluate the layer after a complete freeze, refrigerated thaw and cold cut. Until that validation is complete, I publish the sourced reference formula unchanged.

Troubleshooting

  • Lumps: the Pectin NH was not premixed thoroughly with sugar, or the dry mixture was added too quickly without sufficient agitation.
  • Weak set: the wrong pectin was used, the mixture did not reach a complete boil, the gelatin strength or hydration changed, or the fruit system differs from the tested purées.
  • Rubbery texture: the hydrocolloids were overweighed, the layer is too thick, or it is being judged too cold rather than at the cake's chilled serving temperature.
  • Syneresis after thawing: the complete formula or freezing cycle changed, the purée composition differs, or the insert was not validated through the actual production cycle.
  • Dull flavour: the mango-to-passion ratio changed, the purée quality is inconsistent, or the fruit was concentrated by excessive boiling.
  • Air bubbles: the mixture was whisked aggressively after the gelatin was added or poured from too great a height.

Storage and production control

Cool or freeze the preparation promptly under hygienic production conditions. Label the insert with the batch, date, purée products, pectin product and gelatin specification. Keep it protected from freezer dehydration and odour transfer. Thaw the completed cake in the refrigerator, not at warm room temperature.

The professional sources validate the process and frozen application, but they do not establish a universal shelf life for every kitchen. Storage time depends on hygiene, equipment, packaging, temperature control and local food-safety rules. I therefore use a documented shelf-life programme rather than inventing a number from the ingredient list.
