A good crème brûlée is a study in contrast. I want the custard completely smooth and deeply vanilla-scented, with no bubbles or graininess, under a very thin brittle caramel crust that cracks cleanly under the spoon.

My crème brûlée formula

Yield: 6 shallow ramekins.

  • 500 g heavy cream, about 35% fat
  • 100 g egg yolks
  • 75 g caster sugar
  • 1 vanilla bean, or 8–10 g good vanilla paste
  • 1 g fine salt
  • 35–45 g caster or fine granulated sugar for the brûlée crust

How I make crème brûlée

I heat the oven to 150°C / 302°F and arrange the ramekins in a deep roasting tray.

I split the vanilla bean, scrape the seeds into the cream and heat the cream until steaming but not violently boiling. I let the vanilla infuse briefly off the heat.

I combine the yolks, sugar and salt gently. I do not whip them pale because I do not want to incorporate air.

I pour the hot cream gradually into the yolks while stirring, then pass the custard through a fine sieve and remove any surface foam.

I divide the custard between the ramekins, add hot water to the tray so it reaches about halfway up their sides, and bake until the edges are set while the centre still trembles softly, usually about 30–45 minutes depending on depth.

I remove the ramekins from the water bath, cool them and refrigerate for at least 4 hours. Just before serving, I blot away condensation, add a very thin even layer of sugar and caramelize it quickly with a torch.

Why I use only cream

Milk or cream-and-milk versions are legitimate, but they give a lighter custard. For the classic rich style I prefer all cream because it produces a fuller, silkier texture while the yolks provide a delicate set.

Why I do not whip the yolks and sugar

Air works against the perfectly smooth texture I want. Vigorous whisking creates foam that can bake into the surface and body of the custard, so I stir only enough to dissolve and combine.

Why I strain the custard

Fine straining removes the vanilla pod, chalazae, tiny coagulated egg particles and much of the foam. It is one of the simplest ways to improve the final texture.

Why I use a water bath

The bain-marie buffers the oven heat. Egg custards set in a narrow temperature range, and direct dry heat can overcook the edges before the centre is ready.

How do I know when crème brûlée is done?

I do not wait for the centre to become rigid. The perimeter should be set while the centre keeps a small controlled tremble. If I use a thermometer, I look for roughly 78–82°C / 172–180°F in the centre, while still judging the movement of the custard.

Why did my crème brûlée curdle or turn grainy?

The custard was overheated. Egg proteins tighten too far, squeeze out water and create a grainy texture. I first check oven accuracy, ramekin depth, water-bath level and baking time.

Why is my crème brûlée watery?

If it remains loose after thorough chilling, it was probably underbaked. The yolk proteins did not set enough to create the final gel.

Why are there bubbles on the surface?

Usually too much air was incorporated before baking. Gentle mixing, fine straining and removing surface foam solve most of this problem.

Why did the surface crack?

Cracks usually indicate overbaking or aggressive cooling. I avoid baking the custard to complete rigidity because it continues to set from residual heat after leaving the oven.

Torch or broiler?

I prefer a torch because it caramelizes the sugar quickly without warming the whole custard. A broiler can work, but it gives me much less control.

Which sugar is best for the crust?

Fine white sugar melts quickly and evenly. I use only enough to create a continuous brittle film; a thick layer becomes hard candy and overwhelms the custard.

Why does the caramel crust soften?

Caramelized sugar is hygroscopic. It absorbs moisture from the air and from the custard, so the brittle glass gradually softens. I brûlée as close to serving as possible.

Can I make crème brûlée ahead?

Yes. The baked uncaramelized custards keep well covered in the refrigerator for about 2–3 days. I caramelize the sugar only when I am ready to serve.

Can crème brûlée be frozen?

I do not consider freezing the best option because egg custards can lose their perfectly smooth texture after thawing. Refrigerated make-ahead storage is preferable.

What is the difference between crème brûlée and crème caramel?

Crème caramel is normally baked over caramel and unmoulded so the caramel becomes a sauce. Crème brûlée remains in its ramekin and receives a dry caramelized sugar crust after chilling.

What is the difference between crème brûlée and crème anglaise?

Crème anglaise is a pourable stirred custard. Crème brûlée is baked with enough yolk structure to hold its shape in the ramekin. The ingredients are related, but the cooking method and final texture are different.

Vanilla matters

There are very few ingredients here, so vanilla quality is obvious. I prefer a real vanilla bean or a high-quality natural vanilla paste when I want the fullest floral, creamy aroma.

My approach

For me, crème brûlée succeeds when nothing distracts from the contrast: cold silky vanilla custard underneath and a very thin caramel crust on top. The technique is mostly about restraint—gentle mixing, gentle baking, patient chilling and very fast caramelization at the end.
