Crème anglaise is one of the quiet foundations of French pastry. I like it because there is nowhere for the technique to hide: milk, yolks, sugar and vanilla become a silky sauce only when the heat is controlled carefully. Once you understand the texture, it is also one of the most useful custards to know.

My crème anglaise formula

This makes about 550–600 g of sauce, depending on evaporation and how thoroughly it is strained.

  • 500 g whole milk
  • 90 g egg yolks
  • 50 g sugar
  • 1 vanilla pod, or an equivalent amount of good natural vanilla

1. Infuse the milk

Split the vanilla pod and scrape out the seeds. Put the pod, seeds and milk in a saucepan. Bring the milk just to a gentle simmer, remove it from the heat and allow the vanilla to infuse for a few minutes.

2. Mix the yolks and sugar

Mix the egg yolks and sugar until smooth. I do not whip them until pale or foamy; extra air makes it harder to judge the custard cleanly while it cooks.

3. Temper the yolks

Pour part of the hot milk gradually over the yolks while stirring. Add the remaining milk, mix, then return everything to the saucepan.

4. Cook to the nappe

Cook over low to medium-low heat, stirring continuously with a flexible spatula and reaching the bottom and corners of the pan. Bring the custard to 82–84°C / 180–183°F. It should coat the spatula in a thin, even film. Draw a finger through that film: the line should remain clear. This is the classic nappe test.

5. Strain and cool

Remove the custard from the heat immediately and strain it through a fine sieve. Serve it warm if appropriate, or cool it rapidly over an ice bath before refrigerating.

What crème anglaise should be like

A good crème anglaise is fluid, glossy and completely smooth. It is not supposed to have the body of pastry cream. When warm, it pours easily around a dessert; when cold, it thickens slightly but remains a sauce.

The important structure comes from the egg yolks. As their proteins heat, they unfold and form a delicate network that thickens the milk. There is no starch to provide a safety margin, which is why temperature control matters so much.

The right temperature

I use 82–84°C / 180–183°F as my working range for this formula. The thermometer is useful, but I never rely on the number alone. I also look for the nappe: a thin custard film that stays on the spatula instead of running away immediately.

Professional formulas are not all cooked to precisely the same number. The proportion of yolks, the amount of cream or milk, the desired final texture and the residual heat of the pan all matter. What matters in your kitchen is using a defined formula, a sensible temperature range and the visual texture together.

Why crème anglaise curdles

Curdling is usually a heat problem. If the custard becomes too hot, or if part of it sits against a hot pan without being stirred, the yolk proteins tighten too far and separate into visible particles.

Use moderate heat and keep the spatula moving. As the custard approaches its finishing temperature, pay particular attention to the base and corners of the saucepan. Remove it promptly once it reaches the correct texture; a heavy pan can continue cooking the custard after it leaves the stove.

If you see only the very first trace of graininess, immediately remove the pan from the heat, strain the custard and cool it. A badly scrambled custard cannot genuinely be returned to the same fine emulsion simply by blending it smooth.

Why my crème anglaise is too thin

First remember that crème anglaise is meant to be a sauce. It will never behave like crème pâtissière. If it is genuinely watery, however, it may simply be undercooked. The yolk proteins need enough controlled heat to create the final viscosity.

Judge the custard at the specified temperature and by the nappe test. Also remember that it will feel slightly thicker after chilling.

Why it is foamy

Foam usually comes from incorporating unnecessary air into the yolks and sugar or from whisking aggressively during cooking. I prefer to mix the yolks and sugar smoothly rather than blanching them into a very aerated mixture, and I cook with a spatula rather than beating with a whisk.

A little surface foam is not a structural disaster, but avoiding it gives a cleaner sauce and makes the true consistency easier to read.

Milk or cream?

Both styles exist. A milk-based crème anglaise is clean, fluid and particularly useful as a universal pastry sauce. Adding cream produces a richer mouthfeel and can support a different yolk balance.

For this recipe I deliberately use whole milk only. It keeps the vanilla clear and gives the classic pourable texture I want. If you change a substantial proportion of the milk to cream, treat that as a different formula rather than assuming every other quantity and cooking endpoint should remain identical.

Crème anglaise vs pastry cream

The distinction is fundamental. Crème anglaise is thickened primarily by egg proteins and remains pourable. Pastry cream contains starch and is cooked into a much firmer cream designed for filling tarts, choux, mille-feuille and many other pastries.

If you need a filling that must hold its shape, crème anglaise is usually the wrong preparation. If you want a delicate vanilla sauce, or a custard base for another preparation, it is exactly the right one.

How I cool and store it

If I am not serving crème anglaise warm, I strain it into a clean container and cool it quickly over ice. Once cold, I cover it and refrigerate it promptly. Because it contains milk and lightly cooked egg yolks, I treat it as a perishable custard rather than something to leave at room temperature.

For best quality I prefer to use it within 2 days. Keep it continuously refrigerated in a clean, closed container. If your local food-safety requirements specify a shorter holding time or a particular refrigeration temperature, follow those requirements.

Can crème anglaise be reheated?

Yes, but gently. Warm only the amount you need over low heat or in a controlled water bath, stirring frequently. Do not bring it back to a boil. If I only need to remove the refrigerator chill, I stop well before the original cooking temperature.

What I use crème anglaise for

It is beautiful with chocolate cakes, soufflés, poached or baked fruit, bread puddings and warm plated desserts. It can also be the starting point for preparations such as ice cream and certain mousse or cream systems, although those recipes may require their own ratios and further ingredients.

The larger lesson is more useful than any one dessert: crème anglaise teaches you how egg yolks thicken a liquid. Learn to recognise the nappe, and many other custard techniques become much easier to understand.

Can I make crème anglaise without a thermometer?

Yes. The traditional nappe test is a valid visual guide: the custard should coat a spatula and a finger drawn through it should leave a clean path. A thermometer makes the process more repeatable, especially while you are learning.

Should crème anglaise boil?

No. With this formula I finish it at 82–84°C / 180–183°F. Boiling sharply increases the risk of over-coagulating the yolks.

Why does crème anglaise thicken as it cools?

Cooling changes the way the custard flows and makes the yolk-thickened structure feel more viscous. It should still remain pourable rather than setting like pastry cream.

Can I use vanilla extract instead of a vanilla pod?

Yes, if it is a good natural vanilla extract. Add it in a way that preserves its aroma; with an extract that does not need infusion, I generally add it toward the end rather than boiling it for a long time.

Can I freeze crème anglaise?

I do not recommend freezing this sauce for normal service. Freezing and thawing can damage its fine texture and emulsion. Make a smaller fresh batch instead.

Can I use crème anglaise as a cake filling?

Not as a direct structural filling. It is too fluid. For a stable filling, use a preparation designed to set or hold its shape, such as pastry cream or an appropriate derivative.

A final note

Crème anglaise looks simple because its ingredient list is short. That simplicity is exactly why I consider it such a useful professional exercise. Stir continuously, control the temperature, learn the nappe, and stop cooking at the right moment. The result should taste of milk, yolk and real vanilla, with nothing heavy hiding their delicacy.
