It is not a direct replacement for gluten. It is one structural tool among starches, flours, proteins and other hydrocolloids, and its effect depends strongly on hydration and dosage.
What psyllium does in a formula
These effects are useful only when the complete recipe has enough water to hydrate the psyllium properly.

Why hydration matters

I evaluate psyllium by what it does after mixing, baking and cooling—not only by how the raw batter looks. A formula that feels easy to handle can still bake dense if water balance, leavening and starch gelatinisation are not working together.
