Soy lecithin is useful in pastry because it sits at the boundary between water and fat. I think of it first as an emulsifier and dispersing aid, not as a mysterious texture improver.
Lecithin is a mixture rich in phospholipids. Those molecules contain regions that interact with water and regions that interact with fat, which is why lecithin can help ingredients disperse and emulsions form more evenly.

In cakes, lecithin can help fat and aqueous ingredients distribute more uniformly. Depending on the formula, that may influence batter consistency, crumb structure and handling.
I do not add lecithin automatically to every cake. Eggs already contain natural emulsifying components, and many cake formulas are perfectly stable without extra lecithin. I use it when I can identify a formulation problem or a specific performance goal.
Soy lecithin in chocolate and ganache

If I substitute one source for another in a sensitive formula, I test the actual product rather than assuming the source name alone predicts performance.
How much soy lecithin should I use?
There is no single professional percentage that fits cakes, bread, chocolate, creams and foams. The correct level depends on lecithin type, the fat-water ratio, the rest of the emulsifier system and the manufacturer's specification.
My rule is simple: start from the supplier's recommended range for that exact product and application, then test at the lowest level that gives the required technical effect. Excess lecithin can alter flavour, texture or processing without adding benefit.
How I disperse lecithin
The best incorporation method depends on the form. Powdered or deoiled lecithin is often convenient for blending into dry ingredients or dispersing into a compatible phase before final mixing. Fluid lecithin is easier to distribute through a fat-rich system.
If granules are difficult to disperse, I do not simply increase the mixer speed indefinitely. I first check whether the product is intended to hydrate or disperse in the chosen phase and whether temperature is appropriate.
Does lecithin retain moisture?
Lecithin is often associated with improved moisture retention in bakery, but I would not treat it as a humectant in the same sense as glycerol or certain sugars. Any shelf-life or softness effect comes from the complete formulation and how lecithin changes fat-water distribution and structure.
Commercial shelf life must still be validated for the finished product. Lecithin alone does not make a cake microbiologically safer.

The professional question is not 'Should I add lecithin?' It is 'What technical problem am I trying to solve, and is lecithin the most appropriate tool for it?' That keeps the ingredient functional rather than fashionable.
