Dark couverture is chocolate formulated for professional coating, moulding and pastry work, with enough cocoa butter to provide the required flow for its intended application. It is not one universal ingredient. Two dark couvertures carrying the same cocoa percentage may spread, set and taste differently.

For the Chocolate Tonka & Passion Fruit decoration, the exact product has not yet been documented. I therefore specify dark couverture by function and require the manufacturer’s technical sheet before assigning a product-specific tempering curve.

Functional composition

  • Cocoa mass supplies cocoa solids and naturally occurring cocoa butter.
  • Added cocoa butter changes fluidity, melting and the quantity of crystallising fat.
  • Sugar changes sweetness, particle loading and perceived cocoa intensity.
  • An emulsifier such as lecithin can modify flow at a low dose.
  • Vanilla or other declared flavour ingredients shape the sensory profile.

Why cocoa percentage is incomplete

The declared cocoa percentage normally combines cocoa-derived materials. It does not state the exact division between non-fat cocoa solids and cocoa butter, nor does it tell me viscosity, yield value, particle size or flavour.

A 70% couverture is therefore not a technical substitute for every other 70% couverture. In a thin decoration, a change in fluidity can alter thickness and strength even before flavour is considered.

Fluidity and viscosity

For a thin decoration, I want a couverture that forms a continuous film without excessive working. The product must still provide enough body for the size and curvature of the piece.

Viscosity is also affected by temperature and crystallisation state. I do not correct a product-selection problem by overheating tempered chocolate, and I do not identify over-crystallisation as high inherent viscosity without checking the process.

How I select a couverture for decoration

  • A flavour profile that supports the finished cake.
  • A fluidity suited to a thin, even sheet.
  • A documented manufacturer tempering curve.
  • Predictable crystallisation and release in the real room conditions.
  • Adequate strength at the intended thickness and service temperature.
  • Reliable supply in the same specification.

What to record for an exact product node

  • Manufacturer and exact product name
  • Cocoa percentage and complete ingredient declaration
  • Fluidity or viscosity information supplied by the manufacturer
  • Product-specific melt, crystallisation and working guidance
  • Sensory profile
  • Applications validated in Tanya’s kitchen
  • Permitted substitutions and the observed consequence of each substitution

Substitution rule

I treat a change of couverture as a controlled process change. For decoration I repeat the temper test, spreading test, release test and room-temperature snap test. Matching brand or cocoa percentage alone is not sufficient evidence of equivalent performance.
