A good éclair should feel light even though it contains three distinct preparations: a dry, hollow choux shell, a smooth cream filling and a thin glaze. I build it from structure first. If the shell is weak or damp, no filling or decoration can correct it.

For this recipe I use my established pâte à choux as the shell. The important éclair-specific work is piping every piece evenly, baking it until genuinely dry, filling without leaving empty pockets and keeping the glaze thin enough that chocolate does not dominate the pastry.

My chocolate éclair formula

Yield: approximately 14–16 éclairs, depending on piping length and diameter.

  • Pâte à choux — 1 batch of my recipe: 125 g water, 125 g whole milk, 100 g unsalted butter, 150 g T55 or all-purpose flour, up to 250 g beaten whole egg, 5 g fine salt, 5 g granulated sugar
  • Crème pâtissière — 500 g whole milk, 90 g egg yolks, 75 g granulated sugar, 45 g cornstarch
  • Dark chocolate, approximately 64–70% — 100 g, for the pastry cream
  • Dark couverture chocolate, approximately 64–70% — 100 g, for the glaze
  • Heavy or whipping cream, about 35% fat — 100 g, for the glaze

1. Make the chocolate pastry cream

Bring the 500 g milk to the boil. Mix the yolks, sugar and cornstarch until homogeneous. Temper with part of the hot milk, return everything to the saucepan and cook while whisking until the cream has boiled and the starch is fully cooked.

Remove from the heat and add the 100 g dark chocolate. Mix until completely melted and emulsified. Spread the cream in a shallow clean container, cover the surface and cool promptly. Refrigerate at 2–4°C / 36–39°F until completely cold.

2. Make the pâte à choux

Bring the water, milk, butter, salt and sugar to a full boil. Remove from the heat, add all the flour at once and mix immediately. Return to medium heat and dry the panade until it forms one cohesive mass, pulls from the sides and leaves a thin film on the pan.

Cool the panade briefly, then incorporate the beaten egg progressively. I do not force in the final egg simply because the formula lists 250 g. I stop when the paste is smooth and glossy and falls from the paddle or spatula in a thick V-shaped ribbon.

3. Pipe the éclairs evenly

Transfer the choux to a piping bag fitted preferably with a finely fluted 14–15 mm tip. Pipe straight lengths of about 12 cm onto a lined tray, keeping the pressure and diameter as consistent as possible.

The fine fluting helps distribute expansion across the surface. If I use a plain tip, I pay even more attention to smooth piping because ridges, trapped air and uneven thickness encourage irregular cracking.

4. Bake until the shells are dry

For my choux, a reliable starting point is about 170°C / 338°F in a fan oven or 180°C / 356°F in a conventional oven. Éclairs are larger than small profiteroles, so I judge the bake by colour, firmness and internal dryness rather than using one rigid time.

Do not open the oven during the first expansion and setting phase. The finished shells should be deeply golden, firm and light for their size. If the exterior is coloured but the interior is still moist, vent the shells and dry them briefly in a low or switched-off oven. Cool completely before filling.

5. Fill from the underside

Whisk the cold chocolate pastry cream only enough to restore a smooth piping consistency. Make two or three small holes along the underside of each shell and pipe through them until the éclair feels evenly filled from end to end.

One large injection point can leave an empty section at the opposite end. Several small filling points give me better control without cutting the shell open.

6. Make a thin chocolate glaze

For a simple professional glaze, make a 1:1 dark chocolate ganache: place 100 g dark couverture in a bowl, heat 100 g cream to about 75–80°C / 167–176°F and add it progressively to the chocolate, mixing from the centre until glossy and elastic.

Let the ganache cool until it coats rather than runs. Dip or glaze only the top surface of each filled éclair. I want a neat, thin layer; a heavy cap of chocolate changes the balance of the whole pastry.

Why éclairs crack

Some surface movement is natural because choux expands rapidly, but deep random cracks usually point to uneven piping, trapped air, a surface setting too aggressively or an oven profile that is too severe for the size of the éclair.

A finely fluted tip is useful because it creates many small ridges that can expand more evenly. It is not a substitute for correct choux consistency or oven control.

Why éclairs collapse

An éclair can look fully expanded before the walls are dry enough to support the cavity. Collapse after baking usually means the structure was under-set, the shell remained too wet, the oven was opened too early or the paste contained too much egg.

I prefer a shell that is a little darker and drier rather than pale and fragile. The filling will introduce moisture later, so the baked shell needs reserve crispness.

Why there is no hollow centre

First check the consistency of the choux. A paste that is too stiff cannot expand freely; a paste that is too loose spreads before it can build height. Then check the panade drying, piping geometry and oven heat.

The cavity is created by steam, but steam alone is not enough. The cooked starch and egg proteins must be capable of stretching during expansion and then setting into a permanent shell.

Why the shell becomes soggy

Filled choux always softens with time because water migrates from the cream into the shell. The best defence is to bake the shell thoroughly dry and fill as close to service as practical.

Do not refrigerate unfilled shells uncovered. Humid refrigerator air softens them quickly. If baked shells have lost crispness, re-crisp them before filling and let them cool completely.

Can I make éclairs ahead?

Yes, but I separate the components. Unfilled baked shells can be frozen airtight and re-crisped in the oven before use. The pastry cream can be prepared in advance and held refrigerated at 2–4°C / 36–39°F for a short production window.

Once filled, keep the éclairs refrigerated and serve them as fresh as practical. The longer they stand, the more the shell absorbs moisture from the cream.

Can I freeze éclairs?

I prefer freezing the unfilled shells rather than the finished éclair. Freezing a filled éclair can compromise both the crisp shell and the texture of a starch-thickened pastry cream after thawing.

Freeze the baked shells only when completely cool, keep them airtight, then reheat briefly until crisp and allow them to cool before filling.

Chocolate glaze or fondant?

Both belong to the éclair tradition. Pastry fondant gives the classic smooth, sweet surface seen in many French pâtisseries. Chocolate ganache gives a deeper cocoa flavour and is easier to control in a home or small professional kitchen.

For this version I choose a thin dark-chocolate ganache because it connects naturally with the chocolate pastry cream and lets me control sweetness through the couverture.

My rule for a good éclair

I judge an éclair in this order: shell, filling, glaze. The shell must be straight, hollow and dry. The filling must reach the entire length without making the pastry heavy. The glaze should finish the flavour rather than become the main event.

Once the pâte à choux is reliable, éclair production becomes a question of precision: identical piping, complete baking, clean filling and restrained finishing.
