My basic dark chocolate ganache
Ganache can become technically complex very quickly, but I like to begin with one clear reference formula. For a soft-set dark chocolate ganache that can be used warm as a coating and, once crystallised, as a soft filling or spread, I use equal weights of dark couverture chocolate and cream.
The 1:1 ratio is a starting formula, not a universal law. Chocolate composition and the finished use determine whether I keep it, make it firmer or make it more fluid.
- Dark couverture chocolate, 64–70%: 250 g
- Heavy or whipping cream, about 35% fat: 250 g
- Yield: approximately 500 g before handling loss
- Ratio: 1 part chocolate to 1 part cream by weight
Method
- Chop the chocolate finely, or partially melt it, so the cocoa butter is fluid enough to emulsify evenly.
- Heat the cream to 75–80°C / 167–176°F. It should be thoroughly hot; prolonged boiling is unnecessary.
- Pour the hot cream over the chocolate in two or three additions. With each addition, mix from the centre until a glossy, elastic core forms before adding more cream.
- When the mixture is nearly homogeneous, finish with a submerged immersion blender if available. Keep the head below the surface so you refine the emulsion without incorporating bubbles.
- For a fluid coating, use the ganache while it is still warm and appropriately fluid. For filling or spreading, allow it to cool and crystallise until it develops the texture you need.
Why I build the emulsion progressively
Ganache is an emulsion between an aqueous phase, supplied mainly by the cream, and a fat-rich chocolate phase. Simply making the ingredients brown and smooth is not the same as building the most stable emulsion possible.
I add the cream progressively because the small glossy elastic centre gives me a visible sign that the emulsion is forming. Once that core is established, the remaining liquid can be incorporated with much better control.
Why 1:1 works — and why it is not universal
Equal weights of dark chocolate and cream produce a useful soft baseline, especially with dark chocolate in roughly the 64–70% range. It is easy to scale because both ingredients remain equal by weight.
Professional confectionery ganaches may look very different. A ganache designed to be cut, enrobed or kept under tightly controlled conditions can contain less cream plus glucose, invert sugar, butter or other ingredients. Those formulas are solving a different structural and shelf-life problem; they do not make the simple 1:1 cake ganache incorrect.
The chocolate matters as much as the ratio
I prefer couverture chocolate because its cocoa-butter content and fluidity are designed for chocolate work. Two dark chocolates labelled with the same cocoa percentage can still contain different proportions of cocoa butter, cocoa solids and sugar, so they do not necessarily produce identical ganache.
When I change chocolate, I judge the ganache again after it has fully cooled. A higher-cocoa or differently formulated couverture may set firmer even when I have not changed the nominal 1:1 ratio.
Dark, milk and white chocolate cannot use one fixed ratio
I do not replace dark chocolate gram-for-gram with milk or white chocolate and expect the same texture. Their balances of cocoa butter, sugar, cocoa solids and milk solids are different, so the amount of cream must be reformulated for the particular chocolate and application.
This is one reason I prefer to teach ganache as a formulation problem rather than publish a supposedly universal ratio chart. The correct ratio is the one that gives the intended texture with the chocolate actually being used.
Crystallisation determines the texture you actually serve
Warm ganache is deceptive because much of its fat phase is still fluid. As cocoa butter and the other fats crystallise, the ganache develops body. I therefore avoid deciding that a formula is too soft while it is still warm.
A warm 1:1 ganache can work as a fluid coating. After cooling it becomes substantially more structured and can work as a soft cake filling or spread. The exact endpoint depends on the couverture, room conditions and the dessert.
Ganache for filling, frosting and glazing
For glazing or coating, I work with the ganache while it flows cleanly and can level itself. I do not prescribe one universal glazing temperature because different couvertures and applications reach the correct fluidity at different temperatures.
For filling or frosting, I let the ganache crystallise until it can hold the required shape without becoming hard in the finished dessert. If I need a deliberately firm cuttable layer, I formulate for that result rather than simply refrigerating a soft ganache until it feels firm.
Whipped ganache is a different preparation
A classic ganache and a whipped ganache should not be treated as interchangeable. Whipped ganache is formulated and matured so that the fat phase can support aeration, often with additional cold cream.
When I whip ganache, I work with it cold and stop as soon as it has enough body for the intended piping or assembly. Excessive whipping can make it coarse, grainy and eventually separated.
How I fix a split or oily ganache
If a ganache becomes oily or visibly separated, I first treat it as a broken emulsion. I gently warm it enough to make the fat phase workable again, then re-emulsify from the centre or with a submerged immersion blender.
If necessary, a very small amount of warm liquid can help rebuild the emulsion, but I add it cautiously. Adding large amounts of cream simply to hide a split changes the formula and may leave the final ganache too soft.
Other common ganache problems
- Too firm after cooling: the chocolate-to-liquid balance is too strong for the intended use, the chosen chocolate sets more firmly, or the ganache is being judged too cold.
- Too soft: there is too much liquid for the chosen chocolate/application, or the ganache has not had enough time to crystallise.
- Grainy: the chocolate did not melt evenly, crystallisation began before the emulsion was complete, the emulsion is unstable, or a whipped ganache was taken too far.
- Air bubbles: the whisk or immersion blender incorporated air. Keep the blender submerged and avoid unnecessary whipping during emulsification.
- Dull or rough texture: reassess the emulsion, working temperature and crystallisation rather than assuming the ratio alone is responsible.
Reheating and adjusting texture
I reheat ganache gently. The objective is to restore workable fluidity without overheating the chocolate or repeatedly disturbing the emulsion. Short, controlled warming with mixing is preferable to aggressive heat.
If a fully crystallised ganache is consistently too firm or too soft for its intended use, I change the formula on the next batch. Temperature can temporarily change texture, but it cannot correct a fundamentally unsuitable chocolate-to-liquid balance.
Storage and food safety
A simple cream ganache is a perishable preparation. I keep it covered and refrigerated at 4°C / 39°F or below when it is not being used promptly, and I follow the food-safety requirements appropriate to the finished dessert.
I do not assign a long room-temperature shelf life to this basic formula. Professional confectionery ganaches intended for extended storage are formulated and tested differently, often with controlled sugars, water activity, processing and storage conditions.
Can ganache be frozen?
Ganache can often be frozen successfully as part of pastry production, but freezing and thawing can affect emulsion quality and surface condensation. I freeze it well protected and thaw it under refrigeration before gently bringing it to the texture required for use.
For a critical glaze or perfectly smooth finish, I still judge the thawed ganache before using it rather than assuming it will behave exactly like a fresh batch.
Scaling the recipe
Because the basic formula is 1:1 by weight, scaling is simple: 100 g chocolate takes 100 g cream; 500 g chocolate takes 500 g cream. I always scale by weight rather than volume.
Scaling the ingredients does not remove the need to control the process. A larger batch retains heat longer and may require different mixing time and vessel geometry, so I still watch the emulsion and final crystallisation rather than relying only on the arithmetic.
My approach
I formulate ganache from the finished use backward. First I decide whether it must flow, spread, pipe, whip or cut cleanly. Then I choose the chocolate and liquid balance that can produce that texture after crystallisation.
The useful lesson is not that ganache equals 1:1. It is that 1:1 gives us a clear reference point. Once the chocolate or the intended texture changes, I expect the formula to change with it.
