This formula is external professional evidence.
- 280 g plain flour
- 200 g unsalted butter, cool
- 100 g finely ground almonds or walnuts
- 80 g icing sugar
- Fine salt
- Vanilla sugar for coating
Method
- Mix flour, nuts, icing sugar, salt and butter only until a short dough forms; chill until firm.
- Divide evenly and roll small tapered logs, bending each into a crescent.
- Bake at 175°C / 347°F until set with only light colour, approximately 10–12 minutes.
- Rest briefly, then coat carefully in vanilla sugar while still warm.
- Cool fully before airtight storage.
Professional identity
Vanillekipferl are small Central European crescent biscuits made from a tender butter-and-nut short dough and coated in vanilla sugar while warm. Their crescent form and vanilla-sugar finish are defining.
Critical controls
- Avoid overmixing and warming the butter.
- Weigh portions for even baking.
- Do not make pointed ends so thin that they burn.
- Handle warm biscuits gently; the nut-rich crumb is fragile.
