Cornstarch and acid support the Pavlova texture I want, but neither ingredient creates it alone. The egg-white foam, sugar ratio, thickness, drying profile and retained moisture remain the primary system.

What the starch contributes

Cornstarch absorbs and thickens part of the available water as the interior heats. In a small quantity it helps the centre feel soft and marshmallow-like rather than simply wet.

Too much starch can leave a pasty or chalky impression. I weigh it precisely and distribute it evenly rather than adding a casual spoonful.

What the acid contributes

A small amount of vinegar or lemon juice lowers pH and changes how egg-white proteins unfold and join together. This can make the foam less prone to tightening abruptly during whipping and heating.

Acid is not a substitute for a clean bowl, correct whipping or dissolved sugar. Too much also changes flavour and may weaken the surface.

Why I combine them late

I mix the measured starch with the measured acid and fold it through the completed glossy meringue. This avoids dry starch pockets and limits the number of folding strokes.

I stop as soon as the mixture is even. Prolonged folding removes air and can turn the foam looser.

Vinegar or lemon juice

Both can work at the small quantity used here. Lemon brings its own aroma and variable acidity; white-wine vinegar is relatively neutral but still product-specific. I do not assume equal volume proves identical acidity.

When changing the acid, I evaluate flavour, foam behaviour and the baked centre together.

Why the centre can still be raw

Starch cannot make a very tall underbaked Pavlova safe or structurally complete. A liquid centre points toward insufficient heat penetration, excessive thickness or an unstable foam.

The desired centre is soft and cohesive, not flowing egg white.

  • Weigh starch and acid.
  • Keep both quantities small.
  • Fold them through finished glossy meringue.
  • Do not use them to compensate for gritty sugar.
  • Control Pavlova thickness and baking separately.
  • Judge the cooled centre as well as the shell.
