- 250 g strong flour
- 10 g fresh yeast
- 15 g sugar
- 5 g fine salt
- 3 whole eggs, approximately 150 g
- 80 g unsalted butter
- 500 g water and 300 g sugar for syrup
- Citrus peel, vanilla and rum, to taste
- Chantilly and fresh fruit, for service
Method
- Mix flour, yeast, sugar, salt and eggs to an elastic dough, then incorporate softened butter progressively.
- Transfer to a greased savarin ring and proof until light and expanded.
- Bake at 180°C / 356°F until deep golden and dry enough to absorb syrup; unmould and cool.
- Boil syrup with aromatics, cool slightly and soak the savarin evenly until saturated but structurally intact.
- Drain, glaze if desired and fill the centre with Chantilly and fruit.
Professional identity
Savarin is a ring-shaped enriched yeast cake saturated with syrup and commonly served with cream and fruit. It is closely related to baba but should not be collapsed into it: shape, inclusions and service conventions distinguish the identities.
Critical controls
- Develop gluten before adding butter.
- Do not underbake: weak crumb collapses during soaking.
