This is my white sandwich bread: soft, fine-crumbed and rich enough to stay tender without becoming brioche. I make it with milk, cream, egg and butter, then cold-ferment the dough overnight so the next day's shaping and proofing are controlled and practical.
My white sandwich bread formula
This makes approximately 613 g dough, suitable for one medium sandwich loaf depending on the capacity of your pan:
- Wheat flour — 330 g
- Cold water — 100 g
- Whole milk, cold — 60 g
- Cream, cold — 30 g
- Whole egg, cold — 25 g
- Granulated sugar — 25 g
- Unsalted butter, cold and cut into cubes — 30 g
- Fine salt — 6 g
- Fresh yeast — 7 g
- Egg wash — as needed
Method
- Mix the flour, salt and sugar with the cold water, cold egg and cold milk for a few minutes until the ingredients are evenly combined.
- Add the fresh yeast and continue mixing until the dough reaches approximately 25–26°C / 77–79°F.
- Add the cold cream and allow it to incorporate.
- Add the cold butter in cubes, then continue mixing at higher speed until the dough is smooth, elastic and reaches approximately 27–28°C / 81–82°F. Do not keep mixing once the dough is developed and at temperature.
- Shape the dough into a ball, cover and refrigerate overnight for cold fermentation.
- The next day, divide if necessary for your pan size, shape tightly enough to create an even fine crumb, and place in a greased loaf pan.
- Proof at approximately 25–27°C / 77–81°F. My production reference is about 2 hours, but I judge the dough by visible expansion and lightness rather than by the clock alone.
- For my open-top loaf, brush gently with egg wash before baking.
- Bake at 150–160°C / 302–320°F until evenly browned and fully baked through the centre. The exact baking time depends on the dough weight and pan dimensions, which is why I do not give one false universal time for every loaf pan.
- Remove from the pan and cool completely on a rack before slicing so the fine crumb can finish setting.
Is this the same as classical Pain de Mie?
It belongs to the same family, but my house loaf is not the strict lidded version. Classical French Pain de Mie is usually baked in a straight-sided Pullman pan with a lid. The lid restrains the crown and produces the characteristic square profile, thin crust and very close crumb.
My white sandwich bread is baked open-top and egg-washed, so it develops a rounded top and a little more crust. I prefer to describe it as Pain de Mie-style rather than pretend the two finishing methods are identical.
How to make a square Pullman variation
If you want the strict square Pain de Mie shape, use a Pullman pan designed to bake with its lid. Shape the dough evenly, proof only until it reaches the fill level appropriate for that pan, then close the lid before baking. Do not egg-wash a surface that will be covered by the lid.
Pullman pans differ significantly in dimensions and dough capacity, so use the manufacturer's capacity as the starting point rather than forcing 613 g of dough into every pan. The goal is controlled expansion under the lid, not compression from overfilling.
Why I keep the ingredients cold
This dough contains milk, cream, egg and butter, and all of them can push the dough temperature upward during mixing. Starting cold gives me room to develop gluten without overheating the dough before the overnight fermentation.
Temperature is part of the method, not an optional detail. I want the dough around 25–26°C / 77–79°F before the cream and butter go in, and approximately 27–28°C / 81–82°F when mixing is finished.
Why the cream and butter go in after the dough has started developing
Fat makes bread tender, but it can also interfere with gluten development when the dough is heavily enriched from the first second of mixing. I therefore establish the dough first, then add the cream and butter.
Once the butter is fully incorporated, I look for a smooth, elastic dough rather than continuing to mix for an arbitrary number of minutes. Overmixing creates heat and can weaken the very structure I am trying to build.
Why I cold-ferment the dough overnight
The overnight rest slows fermentation, develops flavour and makes this enriched dough easier to divide and shape the next day. Cold dough is firmer, so it is easier to create an even cylinder without tearing or smearing the butter-rich structure.
The refrigerator does not stop fermentation instantly. If the dough went into the refrigerator too warm or already over-fermented, it can continue moving before it becomes fully cold.
How I shape for a fine sandwich crumb
For sandwich bread I am not chasing giant holes. I want an even, soft crumb that slices cleanly and holds fillings without tearing.
After the cold fermentation, I degas enough to remove very large irregular pockets, then shape with even tension. The goal is organized gas distribution, not crushing every bubble from the dough.
How I know the loaf is proofed
My production reference is approximately 2 hours at 25–27°C / 77–81°F, but the dough decides the endpoint. It should look visibly expanded, feel lighter and respond softly to gentle pressure.
If it still feels tight and dense, it needs more time. If it has become fragile, excessively swollen or begins to lose structure, it has gone too far.
Why sandwich bread can turn out dense
- The yeast was weak or inactive.
- The dough was too cold for the expected proofing schedule.
- Gluten was not developed before the fat additions.
- The butter and cream were added before the base dough had enough structure.
- Final proof ended too early.
- The loaf was shaped so aggressively that too much fermentation gas was removed.
Why a sandwich loaf can collapse
Collapse is usually a structural or fermentation problem rather than simply a lack of flour. The loaf may have been over-proofed, mixed too warm, weakened by excessive fermentation, or removed from the oven before the centre was set.
A lidded Pullman loaf can also suffer when the pan is badly overfilled. More dough does not create a better square loaf; it creates excessive pressure and makes proofing harder to judge.
Can I use instant yeast instead of fresh yeast?
Yes. For 7 g fresh yeast, a practical starting conversion is approximately 2.3 g instant yeast. Fermentation time can still change, so use the dough's expansion and feel as the final guide rather than expecting the clock to remain identical.
Can I use all-purpose flour?
Possibly, but flour strength matters in an enriched bread because the gluten has to carry milk, cream, egg, sugar and butter. A softer flour may need gentler mixing or slightly different liquid handling.
I would not automatically add extra flour simply because the dough feels soft during mixing. First let the gluten develop and the butter incorporate fully before judging consistency.
Why this is softer than lean French bread
Milk, cream, egg, sugar and butter all change the crumb. They tenderize the bread, soften the crust and give the loaf a richer eating quality than baguette or country sourdough.
That is also why the method is different. An enriched sandwich loaf needs enough gluten strength to support the fat and dairy while still finishing soft and fine-grained.
Storage and freezing
Let the loaf cool completely before wrapping it. Once cool, keep it airtight at room temperature for short storage so the crumb stays soft.
For longer storage I prefer freezing. Slice the cooled loaf, wrap it well and freeze. Individual slices can be thawed or toasted as needed without repeatedly exposing the whole loaf to air.
What I look for in the finished loaf
I want a soft, fine and even crumb, enough strength for thin sandwich slices, a tender crust and a clean dairy-and-butter flavour. The loaf should feel light for its size without becoming open and irregular like an artisan hearth bread.
For the open-top version, the egg-washed crown should be evenly coloured. For a Pullman variation, the priorities shift toward straight sides, a flat top, minimal crust and a very regular crumb.
