Challah is an enriched bread that should feel generous without becoming heavy. I look for a soft, fine crumb, clean sweetness, good strand definition and a braid that expands without tearing itself apart in the oven.
My challah formula
This makes about 890 g of dough, enough for one large braid or two smaller loaves:
- Wheat flour — 500 g
- Water — 180 g
- Whole eggs — 100 g
- Granulated sugar — 55 g
- Neutral oil, such as sunflower or canola — 40 g
- Fine salt — 9 g
- Instant yeast — 7 g
- Egg wash — 1 egg beaten with a small splash of water
- Sesame or poppy seeds — optional
Method
- Mix the flour, water, eggs, sugar, salt and instant yeast until there is no dry flour and the dough begins to organize.
- Knead until the dough becomes smooth and elastic, then add the oil gradually and continue mixing until it is fully absorbed. I want developed gluten, not a greasy surface.
- Keep the finished dough comfortably warm rather than hot. Around 24–26°C / 75–79°F is a useful target for controlled fermentation.
- Cover and bulk-ferment until the dough has expanded clearly and feels lighter. Depending on yeast activity and room temperature, this is often around 60–90 minutes.
- Divide the dough according to the braid you want. For one three-strand loaf, divide into three equal pieces. Preshape each piece into a short log, cover and rest for about 15–20 minutes so the gluten can relax.
- Roll the pieces into even strands, slightly thicker in the centre and tapered gently toward the ends. Braid with enough control to keep the loaf tidy, but do not pull the strands tight.
- Place on a lined baking tray, cover lightly and proof until the loaf is visibly expanded, soft and aerated. The braid should still have definition; it should not look fragile or exhausted.
- Brush gently with egg wash. Add sesame or poppy seeds if you want them.
- Bake at 190°C / 375°F until the loaf is deeply golden and fully set, usually about 25–30 minutes for one large braid. If the surface colours too quickly, protect it lightly while the centre finishes baking.
- Cool completely on a rack before slicing. The crumb continues to set as the loaf cools.
What makes challah different from brioche?
Both are enriched breads, but I treat them very differently. Brioche depends on a large quantity of butter and often feels more delicate, rich and pastry-like. Challah is usually built with eggs and oil, which gives tenderness and colour while keeping the flavour cleaner and the dough easier to braid.
That difference matters in mixing. In challah I want a dough strong enough to hold visible braided strands through proofing and baking. Too much fat or too little gluten development makes the braid spread and blur.
Why I add the oil after the dough starts developing
Oil tenderizes the crumb, but fat also coats flour and can slow gluten development. I prefer to let the flour, water and eggs begin forming structure first, then incorporate the oil gradually.
When the oil is absorbed correctly, the dough becomes smooth and supple. If oil remains on the bowl or the dough looks slippery, I keep mixing gently rather than adding flour immediately.
How much should I knead challah?
I do not judge challah by a fixed number of minutes because mixer speed, flour strength, dough quantity and temperature all change the answer. I judge the dough itself.
It should be smooth, elastic and able to stretch without tearing immediately. A thin membrane does not need to be theatrical, but the dough should clearly have enough strength to support fermentation and braiding.
Why my challah dough feels sticky
A fresh enriched dough can feel sticky before the gluten is properly developed. The first response should not be to add a large amount of extra flour. That can turn a potentially soft loaf into a dry one.
Give the dough time to develop, add the oil gradually and keep the work surface only lightly greased or very lightly floured. If the dough remains genuinely fluid after full mixing, then the flour or ingredient weights should be checked.
How I shape even strands
Equal weight matters more than decorative complexity. I weigh the divided pieces so one strand does not proof faster than the others.
After preshaping, I let the logs relax before rolling them longer. Trying to force tight dough into long ropes creates tearing and uneven thickness. The short rest makes the final shaping cleaner and protects the gas structure.
Why challah tears during braiding or baking
- The dough was under-developed and could not stretch with fermentation.
- The strands were rolled while the gluten was still too tight.
- The braid was pulled too firmly and had no room to expand.
- The loaf was under-proofed before baking, so too much expansion happened suddenly in the oven.
- The surface dried during proofing and formed a skin that could not stretch.
How tight should I braid challah?
A braid should be organized, not compressed. I place the strands together with enough control to create a clean pattern, but I leave them room to swell.
If the braid is extremely tight, the loaf can split as the interior expands. If it is too loose, the pattern can open and flatten. The best result comes from even strands and moderate, consistent tension.
How I know challah is proofed
I look for visible expansion, softness and a lighter feel. The loaf should have gained volume while the braided definition is still clear.
A very under-proofed loaf often tears between the strands and becomes unusually domed. An over-proofed loaf can look fragile, spread sideways and lose definition. Time is only a reference; temperature and yeast activity decide the real schedule.
Can I refrigerate challah dough overnight?
Yes. A cold fermentation can make the schedule easier and can improve flavour, but the yeast quantity and timing should be adjusted so the dough does not over-ferment before it is fully chilled.
For an overnight version, I prefer to refrigerate the dough during bulk fermentation, then divide and shape it cold the next day. Cold dough is usually easier to portion cleanly, but it still needs enough final proof after shaping.
Why I use egg wash
Egg wash gives challah its characteristic glossy, deeply coloured surface. I apply it gently so I do not deflate the proofed loaf or glue the strands together with excessive liquid.
For an especially even finish, the wash can be strained before use. Seeds should go on immediately after the wash so they adhere without pressing into the dough.
Why challah can become dense
- The dough did not develop enough gluten before fermentation.
- Too much extra flour was added during mixing or shaping.
- The yeast was weak or the dough fermented too cold for the expected schedule.
- Final proof ended too early.
- The braid was very tight and restricted expansion.
- The loaf was sliced while still hot, before the crumb had finished setting.
Why challah spreads instead of rising
Spreading usually means the dough lacks enough strength for its degree of fermentation. The cause can be weak gluten development, too much proofing, a very warm dough, or shaping without enough surface tension.
The solution is not automatically more flour. First look at mixing, dough temperature, fermentation and braid tension because those are often the real causes.
Sugar or honey?
Both are common. I use granulated sugar in this formula because it gives me a clean reference point for sweetness and fermentation. Honey brings its own aroma, additional water and stronger browning, so it should be treated as a real formula change rather than a one-for-one flavouring afterthought.
If I replace sugar with honey, I watch the dough consistency and surface colour rather than assuming the same bake will behave identically.
Oil or butter?
Neutral oil is the more characteristic choice for the style I am making here and keeps the dough flexible and tender. Butter can produce a richer flavour, but it moves the bread closer to brioche in both handling and eating quality.
If the goal is a classic braided challah with clean egg flavour and a soft crumb, I prefer a neutral oil.
What flour works best?
A good all-purpose wheat flour is usually sufficient if it has enough strength to support enrichment and braiding. Very weak flour can make the dough difficult to shape, while unnecessarily strong flour can make the strands resistant and the crumb too chewy.
I want balance: enough protein for elasticity, but not so much that the bread loses tenderness.
Storage and freezing
Cool the loaf completely before wrapping it. Keep it airtight at room temperature for short storage so the crumb stays soft.
For longer storage, freeze it well wrapped. I prefer freezing slices or half-loaves so only the amount needed is thawed. Challah also makes excellent toast or French toast once it is no longer at peak freshness.
What I look for in finished challah
I want a deeply golden but not burnt crust, clear braided definition, a fine and tender crumb, enough strength to slice cleanly and a flavour that is gently sweet rather than dessert-like.
The loaf should feel light for its size. When torn, the crumb should show soft fibres rather than a tight, cake-like interior. That texture comes from gluten development, balanced enrichment and patient proofing working together.
