Rye bread is at its best when the rye is unmistakable but the loaf still slices cleanly and has enough structure to stand on its own. For this recipe I use 66% rye flour: enough for a deep rye flavour and moist crumb, while wheat flour gives the hearth loaf the support it needs.
My sourdough rye bread formula
This makes one substantial hearth loaf, about 1.1 kg of dough before baking.
- Rye sour: medium rye flour — 72 g
- Rye sour: water — 59 g
- Rye sour: ripe 100%-hydration rye starter — 12 g
- Final dough: medium rye flour — 318 g
- Final dough: strong wheat bread flour — 204 g
- Final dough: water — 415 g
- Fine salt — 11 g
- Caraway seeds — 6 g, optional
- Instant yeast — 3 g, optional for a more predictable schedule
Method
- The evening before baking, mix 72 g rye flour, 59 g water and 12 g ripe rye starter. Cover and leave until fully ripe and aromatic, usually about 12–16 hours at a moderate room temperature.
- The next day combine all of the rye sour with the remaining rye flour, wheat flour, water and salt. Add caraway if using it. Add the optional instant yeast only if you want the extra schedule reliability.
- Mix until the dough is completely homogeneous. I do not try to develop rye dough as aggressively as baguette or other wheat doughs. It should become cohesive and tacky, with modest strength from the wheat portion. Aim for a finished dough temperature around 27°C / 81°F.
- Cover and bulk-ferment for about 45 minutes. The dough should begin to aerate and relax, but I do not wait for it to double.
- Turn the dough onto a lightly dampened or lightly floured surface. Shape gently into a round or oval loaf, creating enough surface organization to hold the form without repeatedly stretching the rye-rich dough.
- Place seam-side down on baking paper or seam-side up in a well-floured proofing basket. Proof until the loaf is visibly expanded and slightly lighter, usually around 60–75 minutes in a warm environment. The exact endpoint matters more than the clock.
- Preheat the oven and baking surface thoroughly to 230°C / 446°F. Score the loaf if the surface and shaping style call for it, load it with steam, and bake until the crust is deeply coloured and the centre is fully set, usually about 45–55 minutes for this size.
- Vent the steam after the initial part of the bake so the crust can dry properly. If the loaf colours too quickly, reduce the oven modestly while allowing the centre to finish.
- Cool on a rack for at least 4 hours before slicing. Rye crumb continues setting for much longer than a wheat loaf; for the cleanest slices, I prefer to let a substantial rye loaf rest even longer.
Why I chose 66% rye
Rye bread is not one fixed formula. A deli rye may contain only a modest proportion of rye flour, while dense Northern and Eastern European breads can approach 100% rye. Those breads do not behave the same way.
At about two-thirds rye, the flavour and moisture are clearly rye-led, but the wheat fraction still contributes enough gluten structure for a free-form loaf. If the rye proportion moves toward 90–100%, I would change the hydration, fermentation and often the loaf format rather than simply substituting more rye into this formula.
Why rye dough feels sticky
Rye contains far less of the gluten-forming protein system that gives wheat dough its familiar elasticity. Its structure depends much more on water-binding carbohydrates and on starch setting during baking.
That is why a rye-rich dough can feel tacky even when the hydration is correct. Adding flour until it feels like a baguette dough usually makes the finished loaf unnecessarily dry. I handle it with damp hands, a scraper and deliberate movements rather than trying to remove every trace of stickiness.
Why acidity matters in rye bread
The rye sour is not only a flavour ingredient. Fermentation and acidity help create the conditions in which a rye crumb can set cleanly rather than becoming pasty or gummy.
For that reason I prefer an overnight rye sour instead of treating sourdough as a decorative addition to a yeasted bread. It gives the rye flour time to ferment and creates a more coherent flavour and structure.
Does rye bread need kneading?
It needs thorough mixing, but not the long, intensive gluten development I use for a strong wheat bread. In this formula the 34% wheat flour contributes useful support, so I mix until the dough is uniform and the wheat component has begun to organize.
Continuing to knead simply because the dough remains sticky is the wrong signal. Rye-rich dough will not suddenly become dry and elastic like white bread dough.
How I judge bulk fermentation
The bulk fermentation is deliberately shorter than in many wheat sourdoughs. I look for the first clear signs of aeration, slight expansion and a dough that feels less dense.
Waiting for a dramatic doubling can push a rye-rich dough too far before shaping. The final proof still has to happen, and the structure is less forgiving than a strong wheat dough when fermentation is excessive.
How I know the loaf is proofed
The loaf should look fuller, slightly rounded and visibly aerated. A gentle touch should meet less resistance than immediately after shaping, but I do not expect the same springy response as a white wheat loaf.
An under-proofed rye loaf tends to tear aggressively and can remain tight inside. An over-proofed loaf can spread, lose surface tension and bake with a compressed or fragile crumb. I use the clock only as a reference beside the condition of the loaf.
Why steam matters
Initial steam delays the setting of the outer crust and gives the loaf a cleaner opportunity to expand. It also supports the characteristic smooth, well-coloured surface of a hearth rye loaf.
After that initial expansion, I want the oven to become drier. The final part of the bake is about driving enough moisture from the crust and fully setting the centre, not keeping the loaf in a permanently humid oven.
Why rye bread becomes gummy
- The loaf was sliced too soon and the crumb had not finished setting.
- The centre was under-baked even though the crust looked dark enough.
- Fermentation or acidity was insufficient for the rye proportion.
- The formula was changed to include substantially more rye without adjusting hydration and method.
- Too much water was added for the particular rye flour and extraction level.
Why my rye bread is dense
A rye loaf will naturally have a closer crumb than an open ciabatta, but it should not feel wet or leaden. Excessive density usually points to an unripe sour, insufficient fermentation, very weak starter activity, under-proofing or an under-baked centre.
It can also come from chasing a dry dough during mixing and adding too much flour. The correct target is a moist, fine rye crumb, not the large irregular holes of a high-hydration wheat bread.
Why the loaf spreads
Some spreading is normal because rye-rich dough has less elastic support. Excessive spreading usually means the loaf was over-proofed, the dough was too warm or wet for its flour, or shaping did not create enough organization in the wheat-supported structure.
If I want to increase the rye percentage substantially, I do not solve spreading by forcing more flour into the dough. I change the formula or use a pan, because a 90% rye loaf is a different structural problem from a 66% rye hearth loaf.
Is caraway necessary?
No. Caraway is strongly associated with several rye-bread traditions, especially deli-style breads, but rye does not require caraway to taste complete.
I list it as optional because the bread should first taste of fermented rye. If I use caraway, I keep the quantity restrained enough to perfume the loaf rather than dominate it.
Can I make this without commercial yeast?
Yes. A vigorous rye sour can leaven this bread on its own. The small quantity of instant yeast in the formula is optional and is there only when a more predictable production schedule is useful.
Without it, the fermentation and proofing may take longer. I follow the dough rather than extending or shortening the process mechanically to match a written time.
What is the difference between this and pumpernickel?
Pumpernickel refers to a different family of rye breads, traditionally associated with very high rye content and, in its classic Westphalian form, an exceptionally long, low-temperature bake. It should not be treated as another name for any dark rye loaf.
This recipe is a rye-dominant sourdough hearth bread. It is designed around 66% rye, conventional bread-baking temperatures and a wheat-supported free-form structure.
What about Borodinsky rye bread?
Borodinsky is also a distinct style. It is associated with rye, sour fermentation, malt and characteristic spices such as coriander, often with a darker and more aromatic profile.
I would formulate Borodinsky as its own bread rather than adding malt or coriander casually to this base loaf. A named traditional bread deserves its own balance and method.
Storage and freezing
Rye bread often keeps its eating quality longer than a very lean white loaf because of its moist crumb. Once it is completely cool, I keep the loaf cut-side protected and avoid refrigerating it for ordinary short storage because refrigeration accelerates bread staling.
For longer storage, slice the fully cooled loaf and freeze it airtight. Individual slices can go directly to the toaster or thaw at room temperature, which is more useful than repeatedly freezing and thawing the whole loaf.
What I look for in the finished loaf
I want a deeply baked crust, a moist but clean-slicing crumb, clear fermented rye aroma and enough acidity to give definition without tasting aggressively sour.
The crumb should be closer than a country wheat sourdough but not gummy. That distinction is important: rye bread is naturally dense in structure, but density and under-baking are not the same thing.
