A levain is the portion of active sourdough culture I prepare for a particular dough. I build it from a small amount of maintained starter, fresh flour and water, then use it when its fermentation strength suits the bread I am making.

I do not define readiness by a fixed number of hours. Feed ratio, flour, water temperature, room temperature and the condition of the seed starter all change the schedule. I use time to plan, but I use expansion, structure and aroma to decide.

The levain for my country loaf

My country sourdough uses 100 g ripe levain at 100% hydration. That contributes 50 g flour and 50 g water to the final dough, so it must be included when I calculate hydration and pre-fermented flour.

I normally build slightly more than the formula needs so the full 100 g can go into the dough without scraping the maintenance jar empty. The exact build can change with the schedule; the important constants are the intended hydration, enough healthy seed culture and a feeding ratio that allows the levain to mature near mixing time.

What I mean by ripe

Volume alone is not enough. A weak culture can make scattered bubbles without building a coherent aerated structure, while a very liquid levain may expand less visibly than a stiffer one.

For a wheat levain in a straight-sided container, marking the starting level makes the rise much easier to read. I also note the temperature because a rise that takes four hours in a warm room may take much longer in a cool one.

  • The levain has expanded clearly from its starting level.
  • Bubbles are distributed through the mixture, not confined to a thin foamy surface.
  • The top is still gently domed or has only just begun to level.
  • The structure looks aerated and elastic rather than watery or separated.
  • The aroma is clean and fermented, with mild lactic acidity rather than a harsh solvent note.

Young, ripe and past peak

A young levain has begun to aerate but has not yet developed its full expansion. It can ferment bread, but the dough may move more slowly than the planned schedule and the flavour may be milder.

At useful peak maturity, the levain is well expanded, lively and still holding its structure. This is the stage I prefer for a country loaf because it gives me predictable lift without beginning the dough with an exhausted preferment.

A levain that rose, flattened and collapsed significantly is past peak. It may smell sharper, feel looser and bring less immediate strength. I do not discard it automatically, but I do not pretend it will behave like the same culture at peak.

Why I do not rely on the float test

The float test asks whether a spoonful of levain traps enough gas to float in water. Hydration, flour choice, handling and the way the sample is taken can all change the result.

A ripe rye levain may not behave like a strong white-wheat levain, and a careless scoop can knock gas out of a perfectly active culture. I trust its rise history, internal aeration, aroma and recent feeding performance more than one yes-or-no test.

How feed ratio changes the clock

A build with a larger proportion of fresh flour and water usually takes longer to mature than a build carrying a high proportion of seed starter, assuming the same temperature and culture strength. This is useful when I need to move the peak toward a morning or evening mix.

I change one variable deliberately. If I alter feed ratio, flour and temperature at the same time, I lose the ability to understand why the levain accelerated or slowed.

How temperature changes maturity

Warm conditions accelerate fermentation; cool conditions slow it. Temperature also changes the balance of acids and aroma, so I do not use warmth simply to force an unready culture through a schedule.

I keep the build in a stable place, record its temperature when precision matters and avoid exposing it to direct heat. If the kitchen changes with the season, I expect the levain timetable to change too.

How flour choice changes the build

Whole-wheat and rye flour often make a levain appear more active because they contribute minerals, nutrients and different fermentation behaviour. They also absorb water and hold gas differently from refined white flour.

If I change the flour, I establish a new visual reference rather than demanding the same height, texture and timing. A flour change is not neutral, even when the levain remains at 100% hydration.

When a refrigerated starter needs more than one feed

A recently fed, reliably maintained starter may need only one well-timed build before baking. A culture that has been cold for a long time, rises slowly or smells strongly of accumulated acidity may need successive room-temperature feeds before I ask it to raise bread.

I continue until the culture repeats a strong, predictable rise. One isolated burst is less convincing than consistent performance across feeds.

How I recover an overripe or sluggish levain

Adding extra levain to compensate for poor activity is not my first solution. It changes pre-fermented flour, acidity and dough timing at once. I restore the culture first, then keep the bread formula interpretable.

  • Keep a small portion and feed it with fresh flour and water at a deliberate ratio.
  • Hold it at a stable moderate temperature.
  • Mark the level and record how long it takes to expand.
  • Feed again near or just after peak if the first cycle remains weak or excessively acidic.
  • Use it in bread only when the rise becomes repeatable and the aroma is clean.

How levain maturity changes the dough

A young levain can lengthen bulk fermentation. A very overripe levain can bring more acidity while its weakened structure and depleted food make the dough less predictable. Neither result is corrected reliably by following the original clock.

After mixing, I still judge the dough itself. Levain maturity sets the starting conditions, but flour strength, dough temperature, salt, hydration and the amount of pre-fermented flour determine how those conditions develop.

Levain is not baker's yeast

A sourdough culture contains wild yeasts and lactic-acid bacteria living together. A biga or poolish made with commercial yeast is also a preferment, but it does not have the same microbiology, acidity or maturity pattern.

I compare them to understand fermentation choices, not to exchange them gram for gram. Replacing one with another requires a reformulated dough and a new schedule.

My final check before mixing

Before I mix, I ask three questions: has the levain expanded strongly, is it still holding an aerated structure, and does its aroma match a healthy recent feeding history? If the answer is yes, I use it and begin judging the dough from its actual temperature.

That small pause is more useful than forcing a levain into the mixer because a timetable says it should be ready.
