A poolish is a liquid preferment made with equal weights of flour and water and a small quantity of baker's yeast. I prepare it before the final dough when I want mature wheat aroma, extensibility and a longer fermentation without introducing sourdough acidity.

The useful question is not whether the poolish has waited for a prescribed number of hours. I want it fully aerated and aromatic while it still has enough structure and fermentation activity to support the final dough.

The poolish in my baguette

This poolish is 100% hydration because the flour and water weights are equal. It pre-ferments 10% of the baguette's total flour and contributes 50 g of the formula's total water.

I include both contributions when I calculate the final dough. Adding a poolish on top of an unchanged formula would increase total flour, hydration and dough yield rather than simply adding flavour.

  • Fresh yeast — 0.2 g, or a very small pinch of instant yeast

How I mix a poolish

I dissolve or disperse the very small yeast quantity in the water, add the flour and mix until no dry pockets remain. The mixture should be homogeneous, but it does not need intensive gluten development.

I use a container with enough headroom for expansion and mark the starting level. A straight-sided container makes the rise and later recession easier to read than a wide bowl.

What a ripe poolish looks like

The first sign of a few bubbles is not peak maturity. I wait for the whole preferment to become active. At the other extreme, a deep central collapse tells me the poolish has passed its strongest point.

I judge these signs together. Flour strength, container shape and temperature all change the exact height, so one volume target cannot describe every poolish.

  • It has expanded clearly from its starting level.
  • Fine and medium bubbles cover the surface and continue through the mixture.
  • The top is domed or only just beginning to flatten.
  • The structure still looks coherent rather than watery and separated.
  • The aroma is fermented and wheaty, without a harsh alcoholic or solvent note.

Young, ripe and collapsed poolish

A young poolish is aerating but has not yet developed its full fermentation character. Used too early, it contributes less aroma and may leave the final dough moving more slowly than expected.

A ripe poolish is fully active and still holding gas. This is the stage I prefer for baguette dough because it gives me extensibility without beginning with an exhausted preferment.

A poolish that has risen, flattened and fallen substantially is overripe. It often smells sharply alcoholic, feels loose and has less remaining food. It can make the final dough less predictable and may weaken handling if I ignore how far it has gone.

Why the yeast dose must match time and temperature

The small yeast quantity only makes sense together with the flour weight, fermentation time and temperature. A warm poolish intended for a short maturation needs a different dose from one planned for a cool overnight fermentation.

I do not increase yeast simply because 0.2 g looks insignificant. Over many hours, a small change can move the peak several hours and leave the preferment collapsed before I am ready to mix.

How I measure very small yeast quantities

For fractions of a gram, I use a precision scale. If the scale cannot read the dose reliably, I make a larger preferment in the same proportions or use a measured yeast dilution and count only the water that enters the formula.

I avoid guessing a large pinch and calling it close enough. The preferment is where a small weighing error receives many hours to multiply.

How temperature changes the schedule

Warmer conditions accelerate yeast and enzyme activity; cooler conditions slow them. I therefore note the actual room or preferment temperature instead of treating 'overnight' as a technical measurement.

If the kitchen is warmer than usual, I can reduce yeast, shorten the maturation or use cooler water. I change deliberately and record the result rather than trying to rescue a collapsed poolish after the fact.

What poolish changes in the final dough

A ripe poolish contributes fermentation products and hydrated flour before final mixing. In baguette dough, I use it for aroma and extensibility: the dough should lengthen cleanly without becoming weak or sticky.

Poolish does not replace correct mixing, bulk fermentation, shaping, proofing, steam or baking. If the final dough is underdeveloped or over-fermented, a good preferment cannot repair it.

Why poolish is not biga

Poolish is liquid at 100% hydration; a traditional biga is much stiffer. That difference changes mixing, gas retention, enzyme activity and the way maturity appears.

I never exchange equal weights of poolish and biga without recalculating the final water and checking how much flour is pre-fermented. They can serve related goals, but they are different production systems.

Why poolish is not levain

Poolish is inoculated with commercial baker's yeast. Levain is built from a maintained sourdough culture containing wild yeasts and lactic-acid bacteria, so it develops acidity and follows a different feeding history.

I compare their timing and maturity to understand fermentation, not to substitute them gram for gram. Moving from poolish to levain means reformulating the dough and reassessing flavour, strength and proofing.

Can I refrigerate a poolish?

Refrigeration can slow a poolish, but it does not reverse maturity or stop fermentation instantly. A warm poolish continues moving while it cools, and a fully collapsed preferment does not become young again in the refrigerator.

For the cleanest result, I plan yeast, water temperature and room temperature so the poolish reaches its useful peak near mixing time. I use refrigeration as a controlled scheduling tool, not as insurance against every delay.

What I do if the poolish is not ready

If it is still young, I give it time and keep the final-dough ingredients ready rather than compensating with arbitrary extra yeast. If it is only slightly past peak, I may still use it and watch dough strength and fermentation closely.

If it has collapsed deeply, separated or developed an unpleasant aroma, I rebuild it. Starting again costs less than forcing an exhausted preferment through a dough whose failures will be harder to diagnose.

My final check before mixing

I look for full aeration, a surface at or just around peak, coherent structure and a clean fermented aroma. Then I check that the poolish quantity has already been included in the formula's flour and water.

When those conditions are clear, the poolish becomes a useful production tool rather than an overnight ritual.
