A biga is a stiff yeast preferment: flour, water and a very small quantity of baker's yeast are mixed before the final dough and fermented separately. I use it when I want mature wheat aroma and a strong fermentation base without making the bread taste sour.
The important skill is not leaving a bowl for a fixed number of hours. I judge whether the biga has developed enough aroma and gas while it still has the strength to support the final dough.
The biga in my ciabatta
This is 60% hydration: 90 g water divided by 150 g flour. The biga contains 30% of the ciabatta's total flour and ferments for about 16 hours under cool room conditions.
These numbers belong together. If I change the yeast, temperature, flour quantity or fermentation time, I reassess maturity rather than assuming that one part of the schedule can move independently.

How I mix a biga
I mix only until no dry flour remains and the pieces hold together as a rough, stiff mass. I am not trying to create a smooth finished dough at this stage.
A stiff preferment hydrates slowly, so I check the bottom and corners of the bowl for dry flour. At the same time, I do not add water merely to make mixing feel easier; that would change the preferment.
Why the yeast quantity is so small
A long fermentation needs very little yeast. The 0.15 g in this example is intentionally small because the biga has many hours to develop.
For quantities below the reliable range of an ordinary kitchen scale, I use a precision scale or make a larger batch in the same proportions. Guessing a large pinch can accelerate the preferment enough to make a sixteen-hour schedule meaningless.
Temperature and time must be read together
Sixteen hours is a useful reference, not a universal promise. A biga at 18°C / 64°F and one at 24°C / 75°F do not mature at the same rate. Flour strength, yeast condition and the actual temperature inside the preferment also matter.
If my room is warmer, I reduce yeast, shorten the fermentation or use a cooler controlled space. I choose one deliberate correction and record it; changing everything at once makes the next batch difficult to interpret.
How I recognise a ripe biga
I look for clear expansion, internal aeration and a clean fermented wheat aroma. When I tear it open, the interior should show a developed network rather than the dense raw texture it had after mixing.
It should feel mature but still alive. I do not wait for complete collapse or a harsh alcoholic smell, because the final dough then begins with depleted fermentation and weakened structure.
If the biga is too young
If the biga is simply moving slowly, I give it more time under an appropriate temperature. I do not compensate automatically by adding excessive yeast to the final dough.
- Expansion is limited and the interior remains dense.
- The aroma is mainly raw flour rather than fermented wheat.
- The final dough ferments slowly and may produce a tight crumb.
- Firm pieces resist incorporation because the preferment has not relaxed or aerated sufficiently.
If the biga is overripe
A slightly advanced biga may still be usable after a controlled test. A severely collapsed preferment is not something I disguise with more flour; I remake it and correct the time, temperature or yeast quantity.
- The preferment rose and then collapsed substantially.
- The aroma becomes sharply alcoholic, solvent-like or unpleasantly acidic.
- The structure feels weak, sticky or exhausted rather than elastic and aerated.
- The final dough may ferment unpredictably, spread or struggle to retain gas.
How I incorporate it into the final dough
I tear the ripe biga into small pieces before adding it so water and fresh flour can surround it evenly. Large dry lumps take longer to disperse and encourage unnecessary mixing.
In ciabatta I combine it with the final flour, most of the water and yeast, develop the dough, then add reserved water progressively. This separates preferment incorporation from the final hydration decision.
Is biga the same as poolish or levain?
No. A poolish is normally a liquid yeast preferment, commonly equal parts flour and water. A sourdough levain is maintained with wild yeasts and lactic-acid bacteria. A classical biga is stiffer and relies on baker's yeast.
All three pre-ferment part of the flour, but their hydration, microbiology, acidity and handling are different. I compare their purpose and maturity; I do not exchange equal weights without recalculating the complete dough.
Can I refrigerate a biga?
Refrigeration can slow a biga, but it does not reset an overripe preferment or stop fermentation instantly. A large warm mass continues changing while it cools.
If I use cold control, I document when the biga entered refrigeration, its temperature, its condition and how it behaved after warming or incorporation. The final dough remains the real test.

A biga becomes reproducible when its condition is recorded, not only its clock time. My standard is a preferment that gives aroma and dependable dough strength without forcing the final fermentation.
