A successful canelé asks the oven to do two jobs at once: set and caramelise a very thin outer layer, then finish a moist egg-and-milk centre. I control the heat profile around the mould rather than relying on one universal time.

My starting profile

For conductive moulds, my practical starting point is 185°C / 365°F in a convection oven for about 45 minutes. I then calibrate from the actual colour, centre and mould size.

Some ovens work better with a hotter opening phase followed by lower heat. I use that approach when the shell needs faster setting, but reduce the heat soon enough for the centre to finish without burning the ridges.

Why the oven display is not enough

Door opening, airflow, shelf position, batch size and mould material all change heat delivery. A probe or oven thermometer helps me discover whether the real chamber temperature matches the display.

I record the mould, fill weight, shelf, temperature stages and total time. Without those details, a darker or paler result cannot be repeated reliably.

How I judge doneness

I look for an even deep-mahogany exterior, including the flutes, rather than a merely golden surface. The pastry should release cleanly and hold its shape after unmoulding.

The centre should be set and custardy, not liquid. If the crust is ready first, I make the early heat less aggressive and extend the later bake; simply removing the canelé earlier preserves raw batter, not tenderness.

Cooling completes the crust

I unmould after a short settling period and cool on a rack with air around every side. Trapped steam immediately begins softening the shell.

The crust becomes crisper as it cools, so I do not judge final texture while the pastry is still very hot.

My calibration sequence

  • Confirm the real oven temperature.
  • Use identical moulds and measured fill weights.
  • Record early and later heat stages.
  • Judge mahogany colour across the flutes.
  • Check that the centre is set, not liquid.
  • Unmould promptly and cool on a rack.
  • Change only one variable in the next bake.
