The mould is part of the canelé recipe. Its material controls how quickly heat reaches the batter, while the coating controls release and the character of the crust. I calibrate them together rather than treating the mould as neutral equipment.

Copper is my reference

Copper transfers heat quickly and evenly into the fluted walls, which helps me develop a dark, thin crust before the custardy centre becomes dry. Aluminium is a practical conductive alternative, although its exact behaviour depends on thickness and finish.

Silicone insulates more strongly. It is convenient, but I expect a lighter, softer shell and adjust my judgement rather than promising the same result with the same schedule.

Butter or beeswax?

Butter alone can release the pastry and produce a good crust. A traditional butter-and-beeswax coating can create a particularly thin, crisp surface, but beeswax is not compulsory.

Whichever coating I choose, the critical word is thin. Excess coating gathers in the base and flutes, fries unevenly and can leave a greasy or waxy layer.

How I apply the coating

I warm the mould only enough to help a fluid coating spread, brush every flute, then invert or drain it so no visible pool remains. The coating should look like a film, not a lining.

If I use beeswax, I handle the hot mixture carefully and keep it away from direct flame. I dedicate tools to it because cooled wax is difficult to remove from brushes and containers.

Why canelés stick

Sticking can come from an incomplete coating, damaged mould surfaces, insufficient crust development or waiting too long while steam condenses inside the mould. I let the baked canelés settle briefly, then turn them onto a rack.

Adding a thicker coating is rarely the best first correction because it may solve release while damaging the crust.

My mould controls

  • Use one mould material per comparative test.
  • Apply the thinnest complete coating.
  • Remove every visible pool before filling.
  • Keep fill weight consistent.
  • Calibrate colour and time to the material.
  • Unmould after a brief settling period so steam does not soften the shell.
