Croissant dough needs enough strength to enclose butter, survive repeated extension and hold fermentation gas. It does not need maximum development at the mixer. I build a smooth coherent détrempe, then use cold time and controlled rolling to finish the structure.

What I want after mixing

The dough should be uniform, moderately elastic and able to hold a clean shape. Dry flour, torn patches and loose butter are signs that mixing is incomplete.

I stop before the dough becomes excessively tight. Strong resistance during lamination encourages uneven sheeting and excessive pressure on the butter.

Ingredient temperature and final dough temperature

Milk and water temperature must suit the room, mixer and planned fermentation. I measure the final dough rather than assuming that cold ingredients guarantee cold dough.

I keep dough below 28°C / 82°F as an upper limit, but lamination later happens much cooler. The ceiling is not the working target for the butter block.

Why I chill in a flat rectangle

A flat, even piece cools more uniformly than a round mass and already matches the geometry needed for lock-in. I cover it so the surface does not dry.

The cold rest also relaxes accumulated gluten tension. Temperature and relaxation are separate conditions; I check both before rolling.

Fermentation before lamination

I allow a controlled initial fermentation and then refrigerate, often overnight. The goal is flavour and predictable yeast activity without letting the dough become gassy and difficult to laminate.

If the dough inflates strongly in the refrigerator, I review yeast quantity, dough temperature, chilling speed and refrigerator temperature.

When the dough fights the roller

Strong spring-back means it needs rest. I do not force it thinner because pressure compresses the butter and makes the sheet uneven.

If the dough is relaxed but the butter is brittle, resting at the same temperature may not solve both conditions; I bring their plasticity back into balance.

My controls

  • Scale salt and yeast accurately and keep them evenly distributed.
  • Measure final dough temperature.
  • Stop at smooth moderate development.
  • Flatten and cover before chilling.
  • Control fermentation during the cold rest.
  • Check both relaxation and temperature before lock-in.
  • Rest resistant dough rather than forcing it.
