Brioche feuilletée should still taste and feel unmistakably like brioche. I want the tenderness, egg richness and elastic crumb of brioche inside, but with a separate laminated butter layer that gives the outside crispness and visible flakes. It is richer and softer than croissant dough, and more structured than ordinary brioche.

My brioche feuilletée formula

This batch makes about 1.4 kg laminated brioche dough before egg wash and any finishing syrup.

  • Strong white or baker’s flour — 500 g
  • Whole eggs — 250 g
  • Whole milk — 75 g
  • Granulated sugar — 75 g
  • Fine salt — 12 g
  • Fresh yeast — 20 g
  • Unsalted butter in the brioche dough, cold cubes — 225 g
  • Unsalted dry or high-fat butter for tourage — 250 g
  • Egg wash — as needed
  • Light neutral syrup for a thin gloss — optional

What makes brioche feuilletée different?

The important distinction is that I am laminating a genuinely rich brioche dough, not renaming croissant dough. The base contains whole eggs and a large amount of butter incorporated into the dough itself. A second butter portion is then enclosed and folded into layers.

That gives two kinds of butter structure at the same time: butter emulsified inside the brioche crumb and butter preserved between dough layers. The finished pastry should therefore be tender and shreddable inside, with a crisp laminated shell rather than the drier honeycomb character of a classic croissant.

Method

  • Put the flour, whole eggs, milk, sugar and fresh yeast into the mixer. Add the salt so it is not sitting directly against the yeast at the start.
  • Mix until the dough develops real gluten strength before adding any butter. It should become elastic and begin to pull cleanly around the hook.
  • Add the 225 g cold dough butter progressively in cubes. Continue mixing until the dough is smooth, glossy and elastic. I stop or cool the dough if it approaches 28°C / 82°F.
  • Let fermentation begin until there is visible activity, then flatten the dough, cover it and chill thoroughly. I prefer an overnight rest at about 4°C / 39°F so this rich dough is firm before lamination.
  • Shape the 250 g tourage butter into an even sheet. The butter and dough should bend with similar resistance: the butter must be plastic, not brittle and not oily-soft.
  • Lock the butter into the cold dough cleanly. Give three simple turns in total, chilling between turns whenever the dough resists or the butter begins to soften.
  • After the final rest, sheet the dough to about 4–6 mm for a loaf, coil or accordion-style moulded brioche. Finer individual shapes can be slightly thinner, but do not roll so aggressively that the layers are compressed.
  • Shape gently and place in buttered or lined moulds without squeezing the cut laminated edges.
  • Proof around 24–26°C / 75–79°F until clearly expanded, light and aerated. Keep the dough below the point where the tourage butter begins to melt into the layers.
  • Brush lightly with egg wash. Bake around 165–175°C / 329–347°F with fan, adjusting within that range for the size and mould. Larger pieces often need roughly 25–40 minutes, but I judge the deep golden colour and fully set centre rather than the clock alone.
  • If I want a glossy finish, I brush the hot pastry very lightly with neutral syrup. I do not soak it, because excess syrup softens the laminated surface.

Why I develop the brioche before adding butter

A dough carrying this much fat needs structure before enrichment. If the dough butter goes in too early, the fat coats the flour proteins and gluten develops more slowly while the mixer keeps heating the dough.

I therefore build strength first, then add the cold butter progressively. The goal is a stable brioche emulsion that can survive chilling, rolling and later lamination without becoming greasy.

Why the overnight cold rest matters

The overnight rest is not only a scheduling convenience. At about 4°C / 39°F the incorporated butter firms throughout the brioche, fermentation slows, and the dough becomes much easier to laminate cleanly without adding extra flour.

A warm, soft brioche base is difficult to match with tourage butter. The colder rested dough gives me a controlled starting point for the next day's folds.

How I judge butter plasticity

I do not rely on one exact butter temperature because different butters behave differently. I compare resistance instead. When pressed or bent, the tourage butter should deform smoothly without cracking, while the dough should be equally cold and firm enough to support it.

If the butter shatters, it is too brittle relative to the dough and will break into islands. If it smears or looks oily, it is too soft and will merge into the dough. Good lamination begins with matching plasticity before the first turn.

Why I use three simple turns

Three simple turns give me enough layering for a clear laminated effect without forcing an already rich dough through excessive rolling. Each turn is useful only if the butter remains distinct.

I chill whenever the dough becomes elastic and resists rolling or whenever the butter begins to soften. Resting is part of lamination, not lost time. Forcing the dough thinner when it is fighting back is one of the fastest ways to smear the layers.

Brioche feuilletée vs croissant

Croissant dough is a leaner laminated yeast dough. It usually carries much less butter inside the base dough, so the roll-in butter is responsible for most of the richness and layered structure.

My brioche feuilletée begins with a much richer base: whole eggs and 225 g butter are already inside the 500 g flour brioche dough before I add 250 g tourage butter. That is why the crumb is softer, more tender and more brioche-like even though the outside is laminated.

Brioche feuilletée vs ordinary brioche

Ordinary brioche contains butter throughout the dough but no separate roll-in butter layer. Its structure comes from gluten development, fermentation and shaping, so the crumb is soft and shreddable without distinct laminated flakes.

Brioche feuilletée adds a second structural system. The laminated butter creates crisp separation between sheets of brioche dough while the incorporated butter keeps the interior tender.

Why did my layers disappear?

The usual causes are heat, pressure and insufficient rest. If the dough or tourage butter becomes too warm, the butter smears into the dough. If I roll too hard, I physically compress the layers. If I skip chilling while the dough is resisting, both problems become more likely.

Once the butter has merged into the dough, another turn cannot restore the lost separation. I stop earlier, chill properly and protect the remaining layers rather than trying to compensate with more folds.

Why is butter leaking during proofing or baking?

Butter leaking during proofing usually means the environment is too warm or the lamination has already been damaged. I keep proofing around 24–26°C / 75–79°F because a faster, hotter proof is not worth melting the tourage butter.

Heavy butter pooling in the oven can also come from underproofing, damaged layers, poor dough-butter compatibility or an oven profile that is too gentle for the chosen piece size. A small trace of butter is less important than whether the pastry keeps its structure and bakes through cleanly.

Why is the centre dense or greasy?

A dense centre usually points to underproofing, shaping too tightly, leaving the final sheet too thick or simply underbaking a large moulded piece. The brioche should feel visibly aerated before it enters the oven.

A greasy crumb begins earlier. I look at whether gluten was developed before the dough butter, whether the butter was incorporated gradually, and whether the dough overheated during mixing. Adding extra flour to a greasy dough changes the recipe; temperature and emulsion are the real controls.

Shaping and mould choice

This dough works well in loaf tins, small brioche moulds, coils and accordion-style shapes because the mould supports the very rich dough while the laminated edges open upward. I sheet around 4–6 mm for most moulded formats and cut with a sharp blade so the layers are not pinched together.

I avoid compressing the pieces tightly into the mould. They need room to proof and expand, and exposed laminated edges should not be flooded with egg wash because that can glue them together.

Make-ahead, freezing and reheating

The natural make-ahead point is the overnight chilled base dough. I mix the brioche on the first day, chill it thoroughly, then laminate, shape, proof and bake on the second day.

For freezing, I prefer the predictable route of freezing the fully baked brioche feuilletée after it has cooled completely. Wrap it airtight. Thaw while wrapped, then refresh it in a moderate oven until the exterior is crisp and the centre is warm. A microwave softens the laminated shell, so I avoid it when texture matters.

Fresh brioche feuilletée is at its best on the day it is baked. Keep short-term leftovers airtight at room temperature rather than refrigerating them, then refresh gently in the oven before serving.

The result I am looking for

I want a deep golden exterior with visible, delicate laminated edges and a centre that still pulls apart like brioche rather than crumbling like pastry. The butter should taste rich but integrated, not oily.

The defining balance is simple: brioche inside, lamination outside. Keeping the dough cold, matching butter plasticity and proofing below the butter-melting zone are what preserve that balance.
