My classical reference uses three simple turns. The number is useful only when each turn preserves a continuous butter layer and an even rectangle. Damaged extra turns create more lines on paper, not better lamination.
A clean lock-in
I enclose an even butter block without empty corners, thick dough seams or exposed butter. I seal the packet neatly and align its thickness before trying to create a long sheet.
The first passes are progressive. Forcing a thick packet immediately thin is one of the easiest ways to fracture the butter.
How I roll
I extend from the centre toward the ends with even pressure and keep the sides parallel. I correct skewed geometry early because every fold multiplies the error.
I brush away loose bench flour before folding so dry flour does not become an unwanted layer.
My three simple turns
For each simple turn, I fold the rectangle in thirds. I keep the orientation consistent and record the completed turn rather than relying on memory.
Three controlled simple turns give the structure intended by my formula. I do not add a fourth because the crumb did not look open enough; I first diagnose layer condition, proof and shaping.
Why I rest between turns
Rest relaxes gluten so the sheet can extend without springing back. It also returns softening butter to a workable condition. These are related but not identical problems.
A cold dough can remain tense, and a relaxed dough can contain butter that is too soft. I continue only when both are ready.
Final sheeting and cutting
After the final rest, I roll to approximately 2.5–3 mm with uniform thickness from centre to edge. I cut with a sharp blade so the laminated edges remain open.
Scraps and compressed edges do not behave like untouched sheet, so I keep them out of the main croissant geometry.

- Start with an even lock-in.
- Reduce thickness progressively.
- Keep the rectangle square and even.
- Brush away flour before every fold.
- Complete three clean simple turns.
- Rest for both gluten and butter condition.
- Sheet uniformly to the intended final thickness.
- Cut without crushing the layers.
