Croissants spread and bake flat
Start with dough temperature and butter condition. The dough and butter do not need to be identical in temperature, but they need compatible plasticity. Butter that shatters is too firm for the dough; butter that smears is too soft.

Croissants proof very slowly
Possible causes include dough that is too cold, weak yeast, an overly cool proofing environment, or a formula with high osmotic pressure from sugar and other ingredients. Do not compensate automatically by raising proofing temperature too aggressively; excessive warmth can soften the butter and damage lamination.
