Whole-wheat bread should taste unmistakably of wheat without becoming dry, heavy or aggressively sweet. I use a simple 100% whole-wheat formula, then give the flour enough water and time to hydrate before I ask the dough to build strength.
My 100% whole-wheat bread formula
This makes about 932 g of dough, suitable for one 23 x 13 cm / 9 x 5 in loaf pan.
- Whole-wheat bread flour — 500 g
- Water — 340 g, with 15–20 g held back at first if your flour is unfamiliar
- Honey — 40 g
- Olive oil or neutral oil — 35 g
- Fine salt — 10 g
- Instant yeast — 7 g
Method
- Mix the whole-wheat flour with about 320–325 g of the water until no dry flour remains. Cover and rest for 20–30 minutes. This gives the bran and endosperm time to absorb water before mixing.
- Add the honey, salt and instant yeast. Mix until the dough begins to develop moderate strength. Add the reserved water gradually only if the flour can absorb it without the dough becoming loose.
- Add the oil and continue mixing until it is fully incorporated and the dough is cohesive and elastic for a whole-wheat dough. Aim for a finished dough temperature of 25–26°C / 77–79°F.
- Cover and bulk-ferment until the dough is clearly expanded and aerated, usually about 60–90 minutes depending on dough temperature and yeast activity. I use the dough condition rather than waiting mechanically for an exact doubling.
- Turn out the dough, press out only the largest gas pockets, and shape it into a firm, even log. Place seam-side down in a lightly greased 23 x 13 cm / 9 x 5 in loaf pan.
- Proof until the loaf is visibly light and the crown rises roughly 2–3 cm / 3/4–1 1/4 in above the rim. A gentle touch should leave an indentation that returns slowly rather than springing back immediately.
- Bake at 190°C / 374°F for about 35–40 minutes. If the crust colours too quickly, reduce the heat slightly or tent the loaf while the centre finishes. A fully baked centre is usually around 93–96°C / 200–205°F.
- Remove the loaf from the pan promptly and cool completely on a rack before slicing.
Why whole-wheat flour needs more attention to water
Whole-wheat flour contains the bran and germ as well as the endosperm. Those additional particles bind water differently from refined white flour, so a dough that looks firm immediately after mixing can soften noticeably after a short rest.
Absorption also changes with wheat variety, protein level, milling and storage conditions. That is why I hold back a little water when I do not know the flour. I would rather add the final water gradually than correct an unnecessarily loose dough with extra flour.
Why I rest the flour before kneading
The 20–30 minute rest is primarily about hydration. It allows the whole grain to absorb water more evenly and makes the subsequent mixing more efficient.
I do not need a very long autolyse for this yeasted sandwich loaf. The goal is not to imitate a long sourdough process; it is to give thirsty whole-wheat flour enough time before adding the remaining ingredients and developing the dough.
Does bran cut gluten?
Bran changes the way a whole-wheat dough develops. Its particles interrupt the continuous gluten network and compete for water, so a 100% whole-wheat dough will not usually feel identical to a strong white bread dough at the same nominal hydration.
I still want useful gluten development, but I do not chase the glossy extensibility of ciabatta. The correct dough is cohesive, elastic enough to hold a pan-loaf shape and well hydrated without being soupy.
Why I use honey and oil
Honey gives a restrained sweetness and supports browning, but at 8% of flour weight it does not turn the loaf into a sweet bread. Oil softens the eating texture and helps the sliced loaf remain pleasant after the first day.
Both are adjustable style ingredients, but changing them changes more than flavour. Removing all of the oil makes the crumb leaner, while adding substantially more honey changes sweetness, browning and dough behaviour.
How I know bulk fermentation is finished
I look for clear expansion, a lighter feel and small signs of gas through the dough. Whole-wheat dough does not need to reach an arbitrary clock time before shaping.
If the room is warm, fermentation may move quickly. If the dough is cool, it may need longer. Finished dough temperature is therefore useful: beginning around 25–26°C / 77–79°F makes the schedule much more predictable.
How I judge the final proof
For this pan size, I want the crown to rise above the rim while the dough still has enough strength for oven expansion. The surface should look full rather than tight.
If the loaf goes into the oven too early, it can split strongly at the sides and bake with a tight crumb. If it is severely over-proofed, it may flatten or wrinkle because the structure no longer has enough reserve.
Why whole-wheat bread becomes dense
- Too little water for the flour's absorption
- Adding extra flour during kneading simply because the dough feels tacky
- Insufficient gluten development after the hydration rest
- Weak or inactive yeast
- Under-fermentation or under-proofing
- Over-proofing followed by collapse
- Using a pan that is too large for the dough quantity
Why the loaf can be dry
Dry whole-wheat bread is often a formula or baking problem rather than an unavoidable property of whole grain. Too little water, too much bench flour and excessive baking all remove the softness I want.
The crumb continues to set while cooling, so slicing the loaf hot also gives a misleading impression of texture and releases moisture that should remain in the bread.
Why the crumb can feel gummy
A gummy line or pasty centre usually points in the opposite direction: the loaf may be under-baked, sliced too soon, or carrying more water than the particular flour and structure can support.
I bake until the centre is fully set, then de-pan and cool completely. An internal temperature around 93–96°C / 200–205°F is a useful check, but it works together with crust colour, loaf weight and a fully baked structure.
Can I use regular whole-wheat flour?
Yes, but different whole-wheat flours can produce noticeably different doughs. A strong whole-wheat bread flour generally gives more volume than a softer, lower-protein flour.
Keep the flour at 500 g and adjust the final 15–20 g of water by dough feel. I would not automatically add more flour to make every brand feel identical.
Can I replace the honey?
Maple syrup or another liquid sweetener can work, but sweetness and water content are not identical. Granulated sugar can also be used, although the liquid balance changes slightly because honey itself contains water.
For the first bake I recommend keeping the formula unchanged. Once you know the dough, small flavour adjustments become much easier to judge.
Can I make it without oil?
You can make a leaner whole-wheat loaf, but it will not be the same sandwich bread. The crumb will generally feel firmer and the loaf will stale differently.
If the goal is a crusty lean whole-grain bread, I would formulate that as a separate bread rather than removing enrichment and expecting this pan loaf to behave identically.
Storage and freezing
Once completely cool, I keep the loaf well wrapped at room temperature for short storage. I avoid the refrigerator for ordinary bread storage because refrigeration accelerates starch retrogradation and makes bread stale faster.
For longer storage, slice the loaf, wrap it airtight and freeze it. Individual slices can thaw at room temperature or go directly into the toaster.
What I look for in the finished loaf
I want a fine, even crumb that bends rather than crumbles, a clearly wheaty aroma, restrained sweetness and a thin enough crust for sandwiches and toast.
A 100% whole-wheat loaf will naturally be more substantial than white sandwich bread. The goal is not to disguise the grain; it is to give the grain enough hydration, fermentation and structure to show its best texture.
