When someone asks me how many types of pastry there are, I do not begin with a fixed number. Pastry traditions overlap, names vary between countries, and the same finished shape can be made from very different doughs. I classify pastries by how their structure is created: shortening, lamination, steam, fermentation or extreme thinness.

That approach is more useful than memorising a list. Once I know where the lift comes from, how fat is distributed and how much gluten the dough needs, I can predict whether a pastry will be crisp, flaky, tender, hollow, bread-like or sturdy.

The main types of pastry at a glance

These families describe production systems, not rigid borders. A bakery may use different terminology, and regional formulas may sit between two groups.

  • Shortcrust pastry — tender doughs in which fat limits gluten development; examples include pâte brisée, pâte sucrée and pâte sablée.
  • Unleavened laminated pastry — repeated layers of dough and butter lifted mainly by steam; classic puff pastry and inverse puff pastry belong here.
  • Quick laminated pastry — visible pieces of fat are folded through the dough with fewer, less regular layers; rough puff and flaky pastry are examples.
  • Yeasted laminated pastry — lamination combines with fermentation; croissants, pain au chocolat and many Danish pastries use this system.
  • Choux pastry — a cooked paste that expands through steam and sets into a hollow shell; éclairs, profiteroles and Paris-Brest are classic examples.
  • Very thin sheet pastry — dough is rolled or stretched into exceptionally thin leaves; filo and strudel dough are the best-known examples.
  • Enriched yeasted pastry — butter, eggs, sugar or milk enrich a fermented dough without necessarily laminating it; brioche is the clearest example.
  • Sturdy pie and raised-crust pastry — dough is designed to support a substantial filling; hot-water crust is structurally different from delicate tart pastry.

What makes something a pastry?

In practical pastry work, the word can describe both a dough and a finished item. Puff pastry is a dough system; a mille-feuille is a finished pastry made from it. A croissant is both a laminated dough product and an individual pastry.

Not every sweet baked good is pastry in the narrow technical sense. Cakes, biscuits, cookies, custards and meringues belong to the broader pastry kitchen, but they are not all pastry doughs. This is why lists of “pastry types” often disagree.

1. Shortcrust pastry

Shortcrust doughs are built for tenderness and controlled strength rather than dramatic lift. Fat coats part of the flour and limits hydration, while restrained mixing keeps gluten development below bread-dough levels.

Pâte brisée is generally neutral and versatile. Pâte sucrée is sweet, cohesive and suited to clean tart shells. Pâte sablée emphasises a sandy, delicate bite. Pâte à foncer is a practical lining dough whose exact formula varies between schools.

The important variables are fat distribution, hydration, mixing and rest. Too much water or working creates elasticity and shrinkage; fat that becomes too warm makes the dough greasy and difficult to line.

2. Puff pastry and inverse puff pastry

Classic puff pastry encloses a butter block inside a détrempe. Rolling and folding create alternating sheets of dough and butter. In the oven, water becomes steam, the layers separate and the dough sets around the expanding vapour.

Inverse puff pastry reverses the arrangement: the butter-rich component surrounds the inner dough. It can produce especially delicate, regular flake, but it requires precise temperature and plasticity control.

Neither dough contains yeast. Their lift depends on preserved layers, steam and sufficient baking. Mille-feuille, palmiers, turnovers and pithiviers are familiar applications.

3. Rough puff and flaky pastry

Rough puff distributes chunks or sheets of butter through the dough before folding. It is faster than classic puff because there is no perfectly formed butter block and the layer pattern is less regular.

Flaky pastry also keeps fat in visible pieces, but methods and terminology vary. Both styles can give excellent crispness and irregular lift when perfect geometric layers are unnecessary.

I choose these doughs for rustic tarts, savoury pies and quick turnovers. They still need cold, distinct fat and relaxed dough; “quick” does not mean that temperature and rest stop mattering.

4. Yeasted laminated pastry

Croissant and Danish dough combine two lift systems. Yeast ferments the dough while rolling and folding create butter layers. Fermentation gives internal gas and flavour; steam and lamination open the honeycomb during baking.

The dough must be strong enough to retain fermentation gas yet extensible enough to laminate without tearing. Butter and dough need compatible plasticity, and proofing must soften the dough without melting the butter.

Croissants, pain au chocolat, many Danish pastries and kouign-amann sit in this family, although their sugar, shaping and fold systems differ.

5. Choux pastry

Choux is not rolled like a tart dough. Flour is cooked with liquid and fat, then eggs are incorporated to make a pipeable paste. During baking, its high moisture content creates steam and the paste expands before proteins and starch set the shell.

The result is a hollow pastry ready for filling. Éclairs, profiteroles, cream puffs, gougères and Paris-Brest all begin with pâte à choux.

Consistency is the central control point. A paste that is too firm may not expand well; one that is too loose can spread and collapse. Drying and baking must also continue long enough to stabilise the interior.

6. Filo and strudel dough

Filo is assembled from separate paper-thin sheets, usually brushed or layered with fat. Strudel dough is traditionally stretched by hand into one extremely thin, continuous sheet. They create crisp layers, but they are not laminated by enclosing and folding a butter block.

Baklava and börek are common filo applications. Apple strudel is the classic example of stretched dough. Both systems depend on thinness, careful handling and moisture management around the filling.

7. Enriched yeasted pastry

Brioche uses fermentation but gains tenderness, flavour and colour from a high proportion of butter and eggs. The fat is emulsified into the dough rather than organised as a separate lamination layer.

That distinction explains why brioche has a fine, soft crumb instead of the distinct honeycomb and crisp flakes of a croissant. Babka, enriched buns and regional festive breads may sit near this family, even when local tradition calls them breads rather than pastries.

8. Hot-water crust and structural pie pastry

Hot-water crust is made for strength. Hot liquid and fat are combined with flour to produce a mouldable dough that can support deep or free-standing savoury pies.

Its objective differs from pâte sablée or puff pastry. Delicate flake is secondary to containment, clean shaping and the ability to carry a heavy filling. This is a useful reminder that the best pastry is the one engineered for its job.

How the pastry families differ

  • For a tender tart shell, I choose a shortcrust formula and control water and mixing.
  • For high, crisp, regular layers, I choose classic or inverse puff pastry.
  • For quicker, rustic flake, I choose rough puff or flaky pastry.
  • For an airy laminated crumb with fermented flavour, I choose croissant or Danish dough.
  • For a hollow shell that can be piped into shapes, I choose choux.
  • For brittle, paper-thin layers around a filling, I choose filo or strudel dough.
  • For a soft, rich fermented crumb, I choose brioche.
  • For a pie that must stand and carry weight, I choose a structural crust such as hot-water pastry.

Pastry dough versus cake batter

Cake batters usually create structure through whipped air, chemical leavening, eggs or a combination of these. Their fat, sugar and water are dispersed through a batter rather than arranged as sheets or controlled pieces inside a dough.

A cake can be produced in a pastry kitchen and sold as a pastry item, but it is not a laminated, shortcrust, choux or sheet pastry. Keeping that distinction clear makes recipes and troubleshooting much easier.

Which pastry is easiest for a beginner?

A basic shortcrust is the most useful starting point because it teaches fat condition, hydration, gluten control and resting without the additional complexity of lamination or fermentation.

Choux is also an excellent learning dough once the baker can judge paste consistency. Puff pastry and croissants demand tighter control of temperature, rolling, rest and timing, so I teach them after the underlying dough skills are secure.

How I choose the right pastry

I begin with the eating experience and service conditions. Does the finished dessert need to shatter, flake, bend, hold a wet filling, stay crisp for several hours or carry weight? Then I choose the structural family that can deliver that result.

I also consider production reality: available time, room temperature, equipment, freezing, transport and when the pastry will be filled. A technically impressive dough is not the right choice if it loses its intended texture before the guest eats it.

My final classification

There is no universally correct answer such as five, seven or ten types of pastry. For professional work, I use eight broad families: shortcrust, classic laminated, quick laminated, yeasted laminated, choux, thin sheet, enriched yeasted and structural pie pastry.

The number matters less than understanding the mechanism. When I can identify how a pastry traps steam, controls gluten, distributes fat or uses fermentation, I can choose it intelligently and diagnose it when the result is wrong.
