Method

  • Pipe Chantilly onto each meringue base.
  • Pass the chestnut cream through a Mont Blanc/vermicelli tip in continuous strands, covering the cream; chill briefly and serve before the meringue softens.

Mont Blanc is defined by sweet chestnut preparation piped in fine vermicelli-like strands over cream, usually with a meringue base. Sponge or tart foundations are legitimate variations; the chestnut-strand finish is essential.
