Potatowhip Cold is a commercial potato-protein ingredient designed to replace some of the functional work of egg white in cold-prepared applications. I find it most interesting when a vegan dessert needs aeration rather than simply an egg-free label: the goal is a stable, fine foam with a clean flavour and a texture that belongs in modern pastry.
I do not treat it as a universal gram-for-gram substitute for egg white. Egg white performs several jobs at once, while a concentrated potato protein responds to water, acidity, sugar, fat and mixing conditions in its own way. I build and test the complete formula around the protein.
What Potatowhip Cold is
Potatowhip Cold is part of Sosa Ingredients’ range of functional pastry ingredients. Its functional component is potato protein, a plant-based protein capable of forming and stabilising foam when correctly hydrated and whipped.
The word “Cold” matters: this version is intended for applications that can be prepared without relying on heat to activate the whipping function. Product formulations and manufacturer recommendations can change, so I always check the current label and technical data sheet for the exact product in my kitchen.
What it can replace — and what it cannot
In the right formula, potato protein can take over the aeration role of egg white. It can support vegan meringue-style preparations, light mousses, foams and aerated fruit components.
It does not automatically reproduce the flavour, water content, coagulation or elastic structure of fresh egg white. A recipe that is baked, poached or set may need additional structure from sugar, starch, fat, chocolate or a hydrocolloid. I reformulate by function instead of exchanging one ingredient by weight.
How I hydrate and whip it
- Use a clean bowl and whisk. Traces of fat can interfere with foam development.
- Weigh the liquid and protein accurately rather than using spoons.
- Disperse the powder completely in the chosen liquid and allow the hydration time stated by the manufacturer.
- Begin whipping at moderate speed so the protein distributes evenly, then increase the speed as the foam develops.
- Add sugar or syrup in the sequence required by the formula, not automatically at the beginning.
- Stop when the foam has the volume and structure needed for the application; excessive whipping can make incorporation more difficult.
How much Potatowhip Cold should I use?
I use the dosage on the current Sosa technical sheet as the starting point. The correct amount depends on whether the base is water, juice or purée and on the amount of sugar, acid, soluble solids and fat in the complete formula.
I avoid publishing one universal ratio because it encourages unreliable substitutions and product specifications may be revised. For development, I make a small controlled batch at the manufacturer’s recommended dose, record the result and adjust one variable at a time.
Water, juice and fruit purée behave differently
Water is the simplest test medium and helps reveal whether the protein and whipping method are working. Juice and purée bring flavour, but they also change acidity, solids and viscosity.
A thick purée may limit expansion, while a very acidic base may change protein behaviour. If a fruit preparation whips poorly, I compare it with a water control before increasing the dose. This separates an ingredient problem from a formula problem.
The role of sugar
Sugar can make a foam more stable, but it also increases viscosity and can slow aeration. The form of sugar and the moment it is added matter. Granulated sugar, icing sugar and cooked syrup do not produce identical processes.
I first decide whether I need a light foam, a meringue that can be piped, or a base that must survive folding and storage. Then I choose the sugar system for that job rather than assuming that every egg-white method transfers directly.
Can it be used for vegan meringue?
Yes, meringue-style preparations are one of its natural pastry applications. The finished behaviour still depends on the full recipe. A raw foam, a dried meringue and a mousse base require different levels of stability and different control of sugar and moisture.
For dried pieces, I test piping definition, drying time, internal crispness and resistance to humidity. For a mousse, I focus on how well the foam survives folding and whether the final dessert remains pleasant after refrigeration.
Why Potatowhip does not whip
- The powder was not fully dispersed or hydrated.
- The bowl, whisk or mixture contained fat.
- The fruit base was too viscous or contained too many suspended solids.
- The acidity or soluble-solids level was unsuitable for the tested dose.
- Sugar was introduced too early or too quickly for the chosen method.
- The batch was too small for the whisk to engage properly.
- The product was stored poorly or used outside the manufacturer’s guidance.
Why the foam collapses
A foam can reach impressive volume and still lack the strength needed for the next step. Collapse may come from insufficient hydration, an unbalanced liquid-to-protein ratio, aggressive folding or a heavy phase being added too quickly.
Temperature also matters. Chocolate, fat-based mixtures and concentrated fruit components should be at a temperature compatible with the foam. I lighten a dense mixture with a small portion first, then fold in the remainder with minimal strokes.
Potatowhip Cold versus aquafaba
Aquafaba is accessible and can make attractive vegan foams, but its composition varies with the legume, cooking process and concentration. Potatowhip Cold is a standardised commercial ingredient and is therefore easier to document in professional production.
That consistency is its main advantage for me. Aquafaba can still be the right choice when simplicity and kitchen accessibility matter more than tight batch control.
Does it taste like potato?
At a balanced dose in a flavoured preparation, the ingredient should not make the dessert taste like potato. An excessive dose or a delicate unflavoured base may make any functional protein more noticeable.
I evaluate aroma and aftertaste after the dessert has rested, not only immediately after whipping. Vanilla, chocolate and fruit should remain clear without using flavour to conceal an over-dosed stabiliser.

I identify the function of egg white in the original preparation, follow the current manufacturer guidance, and rebuild the surrounding formula for plant protein. That produces a vegan dessert with deliberate texture rather than an imitation held together by an arbitrary substitution.
