Swiss meringue is the method I use when I want a smooth, stable meringue made by heating the egg whites and sugar together before whipping. It sits between French and Italian meringue in technique: more controlled than French meringue, but without a separate hot sugar syrup.

My Swiss meringue formula

Yield: approximately 300 g before normal processing loss.

How I make Swiss meringue

I combine the egg whites and icing sugar in a very clean heatproof bowl and set it over a bain-marie. The bowl should sit above the water rather than in it. I whisk continuously and heat the mixture to 55°C / 131°F.

I then transfer it to the mixer and whip until the meringue is thick, glossy and firm and the bowl has cooled close to room temperature. At this point it should hold a clean peak and feel smooth rather than grainy.

For small dry meringues, I pipe the mixture and dry it at 85–90°C / 185–195°F. My production note gives 60–80 minutes, which is realistic for small pieces. Larger shapes need more time and can take closer to two hours. I judge the finish by dryness and clean release from the baking surface rather than by the clock alone.

Why I use a 2:1 sugar-to-whites ratio

A classical Swiss meringue often contains about twice as much sugar as egg white by weight. That amount gives a dense, glossy and stable foam and also supports a crisp dried structure. A lower-sugar Swiss meringue can work, especially as a topping, but it behaves differently and is not the formula I use here.

Why 55°C / 131°F?

Heating the whites and sugar together starts dissolving the sugar and changes the behavior of the egg-white proteins before whipping. Professional pastry formulas use different heating endpoints according to intended use. For this baked and dried version I use 55°C / 131°F. For Swiss meringue that will be served without a later bake, I use pasteurized whites or a method specifically designed around a higher heating endpoint.

Do I need icing sugar?

No. Swiss meringue can be made with granulated sugar, and many professional formulas use it. I use icing sugar in this house formula because it is the version I have documented and it gives me a very smooth mixture. The important point is that the sugar is fully incorporated and the final meringue is smooth, glossy and stable.

Swiss meringue versus Italian meringue

Swiss meringue heats egg whites and sugar together. Italian meringue cooks the sugar separately as a syrup and streams it into whipping whites. Italian meringue usually gives me the most robust hot-syrup structure; Swiss meringue gives a very smooth foam with a simpler sugar workflow.

Swiss meringue versus French meringue

French meringue is made by whipping uncooked egg whites and adding sugar directly. It is the simplest and lightest of the three methods, but it is also the least stabilized before baking. Swiss meringue gains stability from heating the whites and sugar together first.

Can Swiss meringue be torched?

Yes. A finished Swiss meringue can be used as a topping and lightly torched for colour and aroma. If I am serving it without a further cook, however, I use pasteurized whites or a formula designed around an appropriately higher heating endpoint rather than assuming my 55°C / 131°F baked-meringue process is automatically sufficient for direct service.

Can I use Swiss meringue for buttercream?

Yes. Swiss meringue is the base for Swiss meringue buttercream. The meringue is made first, cooled, and then butter is incorporated gradually. Buttercream is a separate complete formula, so I do not add butter quantities to this basic meringue recipe and call them interchangeable.

Why is my Swiss meringue runny?

Check three things first: temperature, whipping and cleanliness. If the bowl is still very warm, the foam can feel softer than it will after cooling. If it has not been whipped long enough, it will lack structure. Even a small trace of yolk or fat can reduce volume dramatically.

Why is my Swiss meringue grainy?

Graininess normally means the sugar was not fully dissolved or the icing sugar contained lumps. Keep the mixture moving over the bain-marie, sift the icing sugar if needed, and rub a small amount between your fingers before whipping: it should feel smooth.

Why is my baked Swiss meringue sticky?

Usually it needs more drying time, or the ambient humidity is high. Low-temperature meringue is very sensitive to moisture. If the centers are still damp, leave them longer at 85–90°C / 185–195°F rather than raising the heat aggressively.

Why did my meringue brown or crack?

The oven is often too hot. Swiss meringue should dry more than it bakes. Strong top heat can colour the sugar and expand the shell too quickly, which encourages cracking. Lower heat and longer drying are safer than trying to rush it.

Can I make Swiss meringue ahead?

For an unbaked whipped meringue, I prefer to make it close to use. Once dried completely, small meringues store much better: keep them airtight and protect them from humidity. Moist air is the main enemy of a crisp shell.

Food safety

My 55°C / 131°F step is the temperature for this pastry process; I do not describe it as guaranteed pasteurization. This house version is subsequently dried in the oven. When Swiss meringue will be eaten without another validated cook, I use pasteurized egg whites where appropriate or follow a method designed for a higher heating endpoint.

Where I use Swiss meringue

I use it for piped dry meringues, decorative elements, some tart and cake toppings, and as the starting foam for Swiss meringue buttercream when the complete buttercream formula calls for it. What I like about the method is its control: the sugar and whites are already one homogeneous mixture before the main whipping begins.
