A few cracks are characteristic of Pavlova. The useful diagnosis begins when the shell breaks deeply, syrup appears, the centre flows or the whole structure collapses. I identify the symptom and its timing before changing the formula.

Cracks during baking or cooling

The dry shell and moist centre contract differently. Excess heat, a very wet centre or abrupt cooling increases the stress. I use a moderate drying stage and cool in the switched-off oven.

A cosmetic crack with a crisp shell and good centre is not the same as structural collapse.

Clear or amber syrup beads

Beads commonly point toward sugar that was added too quickly or remained insufficiently dissolved. Water moves through the foam during baking and concentrates around those regions.

High humidity can also make a correctly baked shell sticky later, so I distinguish beads formed in the oven from moisture absorbed during storage.

A dramatic collapse

Weak foam, overwhipped dry whites, poorly incorporated sugar, underbaking or sudden cooling can all remove support. Excess gas is not the goal; I need fine stable aeration and enough heat-set structure.

A small central settling is normal, especially when I shape a shallow well for cream.

A raw or liquid centre

The desired centre is soft and marshmallow-like, not fluid. A tall deposit may need a longer lower-temperature bake. A shell can appear finished before heat has reached the centre adequately.

I change time or geometry only after confirming oven accuracy and formula weights.

A completely dry centre

The Pavlova was shaped too thinly, dried too long or baked in a profile closer to crisp meringue. I preserve depth and stop once the shell is dry and the centre has become cohesive.

This is a product-target issue, not necessarily poor meringue technique.

My diagnostic order

  • Describe crack, bead, collapse or centre texture precisely.
  • Check remaining sugar grit and foam condition.
  • Verify starch, acid and egg-white weights.
  • Record diameter, height and mass.
  • Confirm actual oven temperature and cooling path.
  • Review storage humidity and decoration timing.
  • Change one variable in the next test.
