When a cake is dense, many bakers instinctively add more baking powder. I rarely begin there. A cake rises through a balance of gas production, aeration, batter viscosity and the moment when heat sets the structure. Baking powder contributes carbon dioxide, but it cannot correct weak mixing, an unsuitable formula or an oven that is not properly heated.

I use baking powder as a precise formulation tool. The right amount should give the batter enough expansion without leaving a coarse crumb, a domed and cracked surface or an unpleasant chemical taste.

What baking powder does in a cake

Baking powder is a chemical leavening system. It normally combines sodium bicarbonate, one or more dry acids and starch. When the powder is hydrated, the acid and bicarbonate react and release carbon dioxide. Those gas bubbles expand as the batter warms in the oven.

The bubbles do not create a cake’s structure by themselves. They expand inside a batter that must be capable of holding them. Flour proteins, starches and eggs gradually set around the bubbles as the cake bakes. If the batter cannot retain the gas, the cake may rise and then collapse.

Single-acting and double-acting baking powder

Most supermarket baking powders are double-acting. They release part of their gas after contact with liquid and another part as the batter heats. This gives a little more production tolerance than a system that reacts only during mixing.

Double-acting does not mean that mixed batter can wait indefinitely. Hydration, air loss, flour development and ingredient temperature continue to change the batter. I still prepare the pans and preheat the oven before combining the final mixture.

How much baking powder should I use?

There is no universal amount for every cake because flour quantity is only one part of the formula. Eggs, sugar, fat, liquid, cocoa, fruit purée, pan depth and mixing method all change the structure and the amount of lift required.

For an initial test, a useful broad range is approximately 3–5 g of baking powder per 100 g of flour. This is a development starting point, not a rule to impose on a tested recipe. Rich or heavy batters may need a different balance, while foam cakes can rely mainly on whipped eggs and may use little or no chemical leavener.

A level metric teaspoon of baking powder is often around 4 g, but brands and measuring spoons vary. For repeatable pastry work, I weigh it.

Example: baking powder for 250 g of flour

For 250 g of flour, an exploratory range of roughly 7.5–12.5 g may be reasonable. I would not choose the final number from flour weight alone. I would first look at the cake style and at how much aeration comes from creamed butter, whipped eggs or another mechanical method.

If a reliable recipe already specifies an amount, I follow that tested formula before experimenting. When developing a recipe, I change the leavener in small measured steps and compare height, crumb, flavour and stability after cooling.

Does more baking powder make a cake fluffier?

Not necessarily. Too much gas can expand the batter faster than its structure can set. The cake may form large irregular tunnels, rise sharply in the centre, crack or collapse as it cools. Excess baking powder can also leave a bitter, salty or metallic impression.

A fine, soft crumb usually comes from balanced leavening plus controlled aeration, correct mixing and suitable baking. More powder is not a substitute for those conditions.

Baking powder versus baking soda

Baking soda is sodium bicarbonate without the complete dry acid system found in baking powder. It needs sufficient acid in the recipe, such as cultured dairy, natural cocoa, citrus or another acidic ingredient, to react appropriately.

Baking powder supplies its own designed acid–base balance. A formula may use baking powder, baking soda or both. Baking soda can also affect browning, flavour and pH, so the two products are not interchangeable spoon for spoon.

If I replace one with the other, I am reformulating the acid balance rather than making a simple substitution.

Can I make baking powder at home?

A fresh mixture of baking soda and cream of tartar can provide an acid–base reaction, often with starch added to improve storage and flow. It does not automatically behave exactly like a commercial double-acting powder, which may contain acids designed to react at different stages.

For an immediate home bake it can be useful, but for professional consistency I prefer a specified commercial baking powder and keep the brand constant during testing.

How to tell whether baking powder is still active

Baking powder gradually loses performance after repeated exposure to humidity. Keep it tightly closed in a dry place and respect the manufacturer’s storage guidance and date marking.

A quick kitchen check is to add a small amount to hot water and look for prompt bubbling. This can reveal a completely inactive powder, but it does not measure its full performance in a cake formula. If production consistency matters, replace an old or poorly stored container rather than trying to compensate with a larger dose.

Why a cake can stay dense even with baking powder

  • The butter and sugar were not aerated sufficiently in a creaming-method cake.
  • Whipped eggs or egg whites lost too much air during folding.
  • The batter was overmixed after the flour was added.
  • The leavener was old, damp or measured incorrectly.
  • The oven was not fully preheated, so the batter warmed too slowly.
  • The pan was too deep or the quantity of batter was unsuitable for it.
  • The formula contained more fat, sugar or liquid than its structure could support.

Why cakes dome, crack or develop tunnels

A strong dome or crack can result from an oven that is too hot, a pan that is too small or deep, a batter that is too stiff, or excessive leavening. Long tunnels can also come from overmixing and uneven distribution of the powder.

I sift or whisk baking powder thoroughly with the flour and other dry ingredients. Concentrated pockets of leavener create local gas production and an uneven crumb.

What happens if I forget the baking powder?

If the batter has not yet gone into the oven, the powder can sometimes be folded in after being sifted with a small portion of flour, but uniform distribution becomes difficult and extra mixing can damage the batter. If baking has begun, adding it is no longer practical.

The result depends on the cake. A strongly aerated egg foam may still have some lift. A batter designed to rely on chemical leavening will usually be denser and lower. I treat the result as a different cake rather than trying to repair it after baking.

Can I add baking powder to a boxed cake mix?

Usually I would not. A commercial cake mix is already formulated with leavening. Adding more can make the crumb coarse or unstable and may introduce an off-flavour. If the result is consistently dense, first check the package instructions, ingredient temperatures, mixing time, pan size and oven temperature.

My practical method for adjusting a cake

  • Weigh the baking powder rather than estimating with a heaped spoon.
  • Keep the brand and type constant while testing.
  • Change only a small amount between test batches.
  • Record pan size, batter weight and actual oven temperature.
  • Evaluate the cake after it has cooled, not only at maximum oven rise.
  • Judge flavour and crumb together with height.

The principle I use

Baking powder should support the structure that the recipe is already designed to build. I do not ask it to rescue an unbalanced batter. When the amount, mixing method and baking conditions work together, the cake rises evenly, holds its volume and keeps a fine crumb without tasting of the leavener.
