Baking soda is pure sodium bicarbonate. It can create useful lift when a batter supplies enough acid, but it also changes pH. That means it influences taste, colour, browning and protein behaviour as well as volume.

Why the acid system matters

Buttermilk, natural cocoa, fruit, molasses and cultured dairy can all contribute acidity, but they do not contribute identical amounts or release it in the same way. I consider the whole formula rather than pairing one spoon of soda with one named acidic ingredient.

When acid and bicarbonate meet in a wet batter, gas production begins. The batter must retain that gas until heat sets the crumb, so mixing time and oven readiness matter.

What excess soda does

Too much soda can leave an alkaline, soapy or metallic impression. It may also push cocoa colour darker or duller and accelerate browning. A cake can rise quickly, then collapse because gas production exceeds the structure’s ability to hold it.

I never add extra soda simply because the batter is heavy. More gas is useful only when the batter can retain it.

What insufficient soda looks like

Too little available leavening can give limited expansion and a tight crumb, but density has many other causes: weak creaming, a broken emulsion, underbaking, excess liquid or too much mixing after flour.

I diagnose those factors before changing the leavener.

Baking soda versus baking powder

Baking powder contains bicarbonate together with one or more dry acids and usually starch. Baking soda relies more directly on acids already present in the formula. They are not interchangeable by equal weight.

Using both can be logical when the formula needs additional lift after neutralising only part of its natural acidity. That balance belongs to recipe development, not casual substitution.

Why pH matters in Red Velvet

A naturally coloured Red Velvet depends partly on the cocoa and batter environment. Excess alkalinity pushes the result away from the restrained reddish-mahogany direction and changes flavour. Natural cocoa and buttermilk help define the intended system.

I do not promise a bright red result from chemistry alone. Without dye, the finished cake should remain brown-red rather than scarlet.

My diagnostic order

  • Confirm the exact soda weight.
  • Check whether the cocoa is natural or alkalised.
  • Verify the cultured dairy and other acids.
  • Mix and bake promptly once wet and dry phases meet.
  • Assess taste, colour, rise and crumb together.
  • Change one part of the acid–base system at a time.
