The hump is not produced by one dramatic temperature trick. I create it by aligning a cold rested batter, active leavener, a correctly filled shell mould and an oven that can recover its heat after loading.

The outside sets before the centre finishes expanding

Heat reaches the batter first through the metal mould and exposed surface. Those outer zones begin setting while steam and carbon dioxide continue expanding through the softer centre, directing lift upward.

This is why mould conductivity, batter depth and oven stability all affect the shape.

Cold batter gives me a controlled start

My 12-hour rest firms the butter and gives every portion a similar starting temperature. I pipe the batter cold into a prepared mould and bake promptly.

If filled trays sit in a warm kitchen, the later trays no longer represent the same process.

Fill weight controls geometry

Too little batter produces a shallow cake with little centre mass; too much can spread, overflow or bake unevenly. I begin near three-quarters of the useful cavity volume, then record the gram weight that suits my mould.

The correct weight belongs to the cavity, not to a universal spoon measurement.

Leavener must be measured and active

My formula uses 8 g baking powder for 118 g flour. I sift it with the flour and distribute it evenly without prolonged mixing.

Removing it requires a different formulation based more heavily on egg aeration. Adding extra baking powder to chase height can coarsen the crumb and distort flavour.

Why I use a steady oven profile

For this formula I use a fully preheated oven at 170°C / 338°F for about 10 minutes. Some formulas use a high-to-low profile, but that does not make it universally superior.

I want a defined hump, golden edges and a tender centre together. Excessive opening heat can exaggerate the bump while drying or burning the small cake.

  • Rest the batter for the formula's full cold period.
  • Confirm that the baking powder is active and accurately weighed.
  • Use a conductive, correctly prepared mould.
  • Standardise grams per cavity.
  • Preheat the oven completely.
  • Load quickly and avoid opening the door early.
  • Judge crumb and colour together with the hump.
