Madeleines look simple, but I think of them as a small lesson in pastry precision: a few familiar ingredients, a cold rest, a properly prepared mould and a short bake. My version is lemon-scented and deliberately straightforward, with a fine buttery crumb and a distinct rounded hump.
My madeleine formula
Yield: approximately 16–20 standard madeleines, depending on mould size and fill.

1. Mix the eggs, sugar and zest
Mix the eggs, sugar and lemon zest until evenly combined and the sugar is well dispersed. I am not trying to build a large-volume foam here; the batter should remain controlled rather than becoming a sponge-cake mixture.
2. Add the dry ingredients
Sift the flour and baking powder together. Add them to the egg mixture and mix only until no dry flour remains. Scrape the bowl carefully so there are no pockets of flour or leavener.
3. Add the butter
Add the melted butter gradually. It should be fluid but not hot. Mix until the batter is smooth and homogeneous, avoiding prolonged mixing once the flour is hydrated.
4. Rest the batter
Cover and refrigerate for 12 hours. This rest hydrates the flour, firms the butter and gives the batter a consistent cold starting point for baking. For this recipe, I would rather mix in the evening and bake the next day than skip the rest.
5. Prepare the mould
Brush a metal madeleine mould thinly and completely with softened butter, dust with flour and tap away every loose excess. Chill the prepared mould if your kitchen is warm. For the strongest shell definition and edge colour, I prefer metal to silicone because it transfers heat more decisively.
6. Portion the cold batter
A piping bag gives the cleanest and most consistent result. Start around three-quarters of the useful cavity volume, leaving room for expansion. Moulds vary, so use the first tray to establish the right gram weight per cavity for your pan.
7. Bake
Bake the cold batter in a fully preheated oven at 170°C / 338°F for about 10 minutes. The madeleines are ready when the centres have risen, the edges are golden and the top springs back gently when touched. Small dark metal moulds can bake faster than pale or heavier pans, so treat the time as a guide rather than an absolute endpoint.
8. Unmould
Unmould promptly and cool on a rack. Leaving madeleines in the hot mould encourages continued cooking and condensation around the edges.
What makes a good French madeleine?
I look for a fine, tender crumb rather than a large open cake crumb, a clear central hump, clean shell definition, golden edges and enough butter aroma to remain evident after cooling. The lemon should perfume the butter rather than dominate it.
What creates the madeleine hump?
The hump comes from several controls working together. Cold rested batter enters a hot, stable oven; the outside begins to set while steam and gases expand through the centre. The mould controls the shape and the leavening supports the rise.
A dramatic high-to-low temperature change is not the only valid method. Some professional formulas use it, but in this formula I use a steady 170°C / 338°F bake because it belongs to the balance of this batter and gives controlled browning.
Why I rest madeleine batter overnight
I refrigerate this batter for 12 hours. Flour hydrates more evenly, the batter becomes more cohesive and the melted butter firms again. Just as importantly, the cold rest makes the starting condition repeatable from batch to batch.
Butter, browned butter and flavour
Use a butter whose flavour you actually like; there is nowhere for poor butter to hide in a madeleine. I use melted butter in this base formula. Beurre noisette is an excellent variation, but it loses water during browning, so 95 g finished browned butter is not exactly equivalent to starting with 95 g ordinary butter.
Grate only the yellow lemon zest, avoiding the bitter white pith. You can rub the zest briefly through the sugar to release its aromatic oils before adding the eggs.
Metal mould or silicone mould?
For the most defined shell and strongest edge colour, I prefer metal. Silicone is convenient but insulates more, so colour and shell definition can be softer and baking time may need adjustment. I would judge colour, rise and crumb before changing oven temperature.
Why didn't my madeleines get a hump?
Check for warm or insufficiently rested batter, an oven that was not fully preheated, inactive or inaccurately measured baking powder, poor cavity fill and a large temperature drop when the oven door opens. Mould shape also matters.
Do not chase the hump with excessive heat. The goal is an evenly baked madeleine with a tender crumb, not the largest possible bump.
Why are my madeleines dry?
Overbaking is the first thing I check. One or two unnecessary minutes matter in such a small cake. Remove the tray when the edges are golden and the centre springs back. Too little batter in a large cavity also increases the proportion of crust to crumb.
Why are they greasy or heavy?
Make sure the melted butter is fully emulsified into the batter. Very hot butter can disturb the mixture, while incomplete incorporation leaves greasy pockets. Accurate weighing matters here; I would not estimate butter or flour by eye.
Why did they stick to the pan?
Brush every detail of a metal mould with a thin film of butter, flour it and remove loose excess. Heavy butter deposits can blur the shell pattern. Unmould while the madeleines are still warm for the cleanest release.
Can I use honey?
Honey appears in many excellent madeleine formulas and can add flavour, browning and moisture retention. It is not part of this lemon base formula, and it is not a neutral substitution for sugar because it also brings water and invert sugars. I treat a honey madeleine as a controlled variation rather than simply adding honey to this batter.
Can I make them without baking powder?
There are respected madeleine formulas that rely more heavily on egg aeration and contain no chemical leavener. That is a different formulation and mixing logic. This recipe is designed around baking powder, so I would not remove it while keeping everything else unchanged.
Storage and freezing
Madeleines are best on the day they are baked, once cool but before the delicate crust softens. When completely cool, keep them airtight at room temperature for about 2 days.
For longer storage, freeze fully cooled madeleines airtight. Defrost them protected from dry air and refresh briefly in a moderate oven if you want to restore some exterior character. I prefer freezing baked madeleines rather than making frozen raw batter the default method.
Scaling the recipe
Scale every ingredient proportionally, including baking powder and zest. Keep the 12-hour rest. For a large batch, divide batter into shallow covered containers so it cools efficiently, and keep unbaked batter refrigerated while earlier trays bake.
