I use pâte sucrée when I want a tart shell to be precise, crisp and elegant rather than merely functional. The dough should roll cleanly, hold a sharp ring, bake evenly and still break with a tender bite. The formula is simple; the real work is controlling mixing, temperature, resting and thickness.

My pâte sucrée reference formula

For approximately 580 g dough:

  • T55 or all-purpose flour — 250 g
  • Unsalted butter, soft but not oily — 150 g
  • Icing sugar — 95 g
  • Fine almond flour — 30 g
  • Whole egg — 58 g
  • Fine salt — 1–2 g
  • Vanilla — optional, to taste

Method

  • Prepare the butter: bring it to a plastic, workable consistency. It should be soft enough to combine smoothly but not warm, greasy or partially melted. Do not whip it for volume.
  • Mix the butter, icing sugar, almond flour, salt and vanilla with a paddle at moderate speed until homogeneous, not aerated.
  • Add the egg gradually and mix until homogeneous again. Scrape the bowl if necessary.
  • Add the flour last and mix only until no dry flour remains. Stop immediately to avoid unnecessary gluten development.
  • Flatten the dough, cover well and refrigerate for at least 4 hours; overnight is convenient.
  • Let very cold dough become just plastic enough to roll. Roll evenly to about 2.5–3 mm for most individual tartlets and refined tart shells.
  • Line the tart ring without stretching the dough. Trim cleanly and refrigerate the lined shell again if it has warmed during handling.
  • For a fully blind-baked shell, begin around 160°C / 320°F in a fan oven, or around 170°C / 338°F in a conventional oven. Bake until the base and sides are evenly golden and fully cooked. Roughly 16–22 minutes is a useful starting range for small shells, but colour and dryness matter more than the clock.

Why I use icing sugar

Icing sugar disperses extremely evenly in this type of dough and helps produce a fine, controlled texture. It also avoids the coarse crystalline texture that a large-grain sugar can leave in a thin tart shell.

I do not treat sugar as sweetness alone. It changes tenderness, browning, spread and how the baked shell fractures. If I substantially reduce the sugar, I expect the texture to change as well.

Why almond flour is here

A modest amount of almond flour adds flavour, fat and tenderness without turning the shell into an almond biscuit. It also changes water absorption and fragility, which is why I do not simply add nut powder to an existing flour-only dough without rebalancing it.

In this formula the almond flour supports the texture; it does not replace the structural role of the wheat flour.

Why I add flour last

The central technical objective is to limit unnecessary gluten development. Flour proteins can form an elastic network once water is available and the dough is worked. Elasticity is useful in bread, but in pâte sucrée it can create resistance during rolling and contribute to shrinkage in the oven.

By building the butter-sugar-egg phase first and adding flour at the end, I can stop mixing as soon as the dough comes together. That is the method I choose for this formula.

Pâte sucrée is not defined by one universal mixing method

French pastry terminology overlaps more than many simplified explanations suggest. You will find excellent professional doughs called pâte sucrée that are made by a creaming-style method, and others made by sablage with colder butter.

I do not tell readers that pâte sucrée must always be made by creaming. For this formula, I choose the butter-first method because it gives the precise, low-elasticity shell I want.

Pâte sucrée vs pâte sablée

I keep these two ideas separate because they solve slightly different practical problems, but not every pastry school uses the words identically.

When I say pâte sucrée here, I mean a refined sweet tart dough designed for clean geometry: even thickness, sharp sides, controlled sweetness and a crisp tender bite. With pâte sablée, I put more emphasis on friability — the sandy, short, tender eating quality. The two families overlap; the useful distinction is the result I am trying to achieve.

Why pâte sucrée shrinks

Shrinkage is usually a process problem rather than a mysterious property of the recipe. The first things I check are:

  • Was the flour mixed too long?
  • Was the dough forced or stretched during rolling or lining?
  • Did it have enough rest after mixing?
  • Did the lined shell rest after being shaped?
  • Was the dough too warm and soft while it was handled?

Why the sides slump

Slumping and shrinkage are related but not identical. Sides can slump when the fat softens before the dough structure has set, when the dough is too warm, when the shell is too thick or uneven, or when the lining geometry gives the sides insufficient support.

I look at the entire sequence — formula, dough condition, ring, thickness, rest and oven — instead of assuming that a hotter oven or longer freezing time will solve every case.

Why the dough cracks while rolling

Cracking often means the dough is too cold for its current thickness. Give it a short period to become plastic rather than using more force. It can also indicate an overly dry formula, inaccurate egg weight or insufficient moisture distribution during resting.

If the edges crack slightly but the centre rolls well, temperature is usually the first variable I correct.

Why the dough becomes sticky or greasy

The butter has become too warm. I stop and cool the dough rather than adding handfuls of flour. Extra flour may make the surface manageable for a moment, but it changes the formula and can make rerolled pastry tougher.

Use only enough bench flour to prevent sticking, and remove excess before lining.

How thin should pâte sucrée be?

For refined tartlets, 2.5–3 mm is a useful target. A thicker shell can be appropriate for a large tart or a robust filling, but thickness changes the eating quality dramatically.

Uniformity matters as much as the number: a shell that is 2 mm in one place and 4 mm in another will never bake evenly.

Do I need to dock the base?

It depends on the ring, baking method and whether the shell is weighted. Docking can help steam escape, but it is not a substitute for correct lining and baking. For very clean modern tart shells I often prefer controlled blind baking and a well-rested shell rather than perforating aggressively.

How do I keep the tart shell crisp after filling?

First, bake it completely. An underbaked shell absorbs moisture quickly no matter what trick is added later.

Pastry cream, fruit, curd and other high-moisture fillings gradually transfer water into the shell. When a tart must stay crisp for longer, I may use a very thin compatible moisture barrier such as chocolate or cocoa butter. Assembly timing matters too.

Can I make the dough ahead?

Yes. Wrapped well, the raw dough can be refrigerated for a short production window or frozen for longer storage. I prefer freezing it flat because it freezes and thaws more evenly and is easier to portion later.

Thaw frozen dough under refrigeration, then allow it to become just plastic enough to roll.

Can I freeze lined tart shells?

Yes. Lined shells freeze well and this can be useful for production. Protect them from dehydration and freezer odours, and keep their shape supported. Bake from properly chilled or frozen condition according to the workflow you have tested with your rings and oven.

Can I reuse scraps?

Yes, but every reroll deserves care. Gather scraps without kneading them into a new elastic dough, rest them again and use them for applications where a slight loss of delicacy is acceptable.

Repeatedly adding bench flour and rerolling warm scraps is one of the fastest ways to lose the tender texture of the original batch.

Can I replace the almond flour?

If nut allergy is the reason, I would use a formula designed without nuts rather than making a casual gram-for-gram substitution. Almond flour contributes fat, solids and water-absorption behaviour, so removing it changes more than flavour.

Can I reduce the sugar?

A modest adjustment is possible, but a large reduction changes spread, browning and tenderness. If I need a significantly less sweet tart shell, I formulate it intentionally rather than assuming the same dough will behave identically.

My rule for pâte sucrée

I want the shell to disappear at exactly the right moment. It must be strong enough to line, bake, fill, move and cut cleanly; then, when you eat it, it should break easily and become part of the filling rather than fight against it.

The formula gives us the starting structure. Minimal mixing protects tenderness. Rest removes tension. Even rolling gives even baking. Correct colour gives crispness. Once those pieces are controlled, pâte sucrée becomes one of the most reliable foundations in a pastry kitchen.
