The coffee dip is short, but it controls the structure of the entire tiramisu. I want coffee on and inside the savoiardi while the biscuit still has enough strength to build a layer. The long chill completes hydration.

Why I cannot give one exact coffee weight

Savoiardi vary in size, density, dryness and sugar crust. Two brands can absorb different amounts during the same dip. A false universal quantity would be less useful than a clear physical cue.

I weigh coffee during production trials when I need a repeatable batch standard, but that standard belongs to the specified biscuit and assembly geometry.

Coffee strength comes before soaking time

I brew coffee strong enough to remain distinct against mascarpone, sugar and cocoa. If the coffee is weak, soaking longer adds water faster than it adds useful flavour.

Moka coffee gives a concentrated traditional direction; espresso also works. I cool it to about 37°C / 99°F or below so it does not warm or soften the mascarpone layer during assembly.

My dipping cue

I dip quickly so the exterior wets immediately while the centre retains resistance. The biscuit must lift and move without collapsing. I do not hold it submerged until it feels ready to eat.

During the next eight to nine hours, moisture moves inward from the coffee and outward from the cream. The final texture cannot be judged at assembly.

Layer geometry matters

I arrange biscuits tightly and fill large gaps with trimmed pieces. Alternating the direction of the second layer improves the stability of a round assembly and reduces continuous weak lines.

Very thick cream layers, broken biscuit pieces or pools of coffee create uneven hydration and can allow the dessert to slide when cut.

How I standardise a biscuit brand

For a repeatable product, I record the biscuit brand, count, average dry mass, coffee batch and remaining coffee after assembly. The difference gives a useful estimate of uptake, including normal handling loss.

I then assess the dessert only after the defined chill and service temperature.

My warning signs

  • Biscuits collapse during dipping: contact is too long or the biscuit is unusually porous.
  • Dry white centres after resting: uptake or resting time is insufficient.
  • Coffee pools in the dish: the biscuits carried free liquid into assembly.
  • Weak flavour with soggy layers: coffee was too dilute.
  • Sliding layers: review soak, cream consistency, geometry and service temperature together.
