Crème mousseline is one of the creams I use when I want the richness and clean piping of buttercream but the custard character of crème pâtissière. It is simply pastry cream strengthened and aerated with butter, but the result depends very strongly on temperature and emulsification.
My crème mousseline formula
This gives a versatile vanilla mousseline for fraisier, Paris-Brest-style pastries, tartlets, choux and layered desserts. For praline mousseline I treat the praline as a separate flavouring component rather than changing the definition of the base cream.
- 500 g whole milk
- 100 g egg yolks
- 100 g sugar
- 40 g cornstarch
- 200 g unsalted butter, divided into 100 g + 100 g
- Vanilla to taste
Method
1. Bring the milk and vanilla close to the boil. In a bowl, whisk the yolks with the sugar, then whisk in the cornstarch until smooth.
2. Temper the yolk mixture with some of the hot milk, return everything to the saucepan and cook while whisking until the pastry cream boils and thickens. Continue cooking briefly after the first bubbles so the starch is fully cooked.
3. Remove from the heat and emulsify in the first 100 g butter while the pastry cream is still hot.
4. Transfer to a shallow container, cover the surface directly and cool it. For the final emulsion, the pastry-cream base and the remaining butter should be at similar cool room temperatures. Around 20–22°C (68–72°F) is a useful working range; exact temperature matters less than both components being close to one another and the butter being pliable rather than oily.
5. Beat the cooled pastry-cream base until smooth. Add the remaining 100 g softened butter gradually and whip until the cream becomes lighter, smooth and aerated.
6. Use immediately for the cleanest piping, or refrigerate as required. If chilled until firm, allow it to soften gradually and re-whip gently before use.
What is crème mousseline?
Crème mousseline is a pastry-cream-based filling enriched with a substantial quantity of butter and whipped to create a lighter, more aerated texture. The pastry cream supplies milk, yolk and vanilla flavour; the butter supplies structure, richness and the ability to pipe clearly.
The French name can create confusion because professional formulas are not identical. Butter quantity changes according to the pastry, desired firmness and serving temperature. Some preparations add all the butter after cooling; others, including the method I prefer for this general-purpose formula, divide it between the hot pastry cream and the final whipping stage. I would not average these methods blindly: they are different ways of controlling texture and emulsion.
Crème mousseline vs crème pâtissière
Crème pâtissière is the starting custard: milk, yolks or eggs, sugar and starch. Mousseline contains much more butter and is whipped. It is therefore richer, more stable for piping and less purely custard-like in texture.
Crème mousseline vs crème diplomate
Diplomate is pastry cream lightened with whipped cream and commonly stabilized with gelatin. Mousseline is pastry cream enriched and aerated with butter. Diplomate feels lighter and more dairy-forward; mousseline is richer, firmer and particularly useful when the filling must hold a defined shape.
Crème mousseline vs buttercream
Mousseline tastes distinctly of pastry cream because milk and yolks remain a large part of its structure. Buttercream is built primarily around butter plus sugar, meringue or another buttercream system. The eating qualities are therefore quite different even when both creams can be piped.
Why I divide the butter
Adding part of the butter to the hot pastry cream creates a smooth enriched custard base. The second part is incorporated later, when the base is cool enough to retain an aerated butter emulsion. This gives me a practical balance between smoothness, richness and volume.
The important point is not the split by itself. The final butter and custard must be compatible in temperature and texture. Cold custard with warm butter, or warm custard with cold butter, is one of the easiest ways to lose the emulsion.
Why does crème mousseline split?
A split or grainy mousseline is usually a temperature problem rather than a failed recipe. If the mixture is too cold, the butter can set into small particles before it emulsifies. If it is too warm, the butter becomes too fluid and the cream loses structure.
If the cream looks curdled and feels cold, warm the outside of the bowl very gently while mixing. If it is loose, shiny and clearly too warm, cool it briefly and then whip again. Make small corrections; aggressive heating or chilling can move the cream from one problem to the other.
Why is my mousseline too soft?
First check temperature. Mousseline naturally softens as butter warms. A cream that pipes beautifully in a cool kitchen can become much softer in a warm room. If the formula was weighed correctly but the cream is loose, short controlled chilling followed by gentle re-whipping is usually more sensible than adding starch or extra butter after the fact.
Also make sure the pastry cream was cooked correctly. Undercooked starch leaves a weaker custard base and can contribute to an unstable final texture.
Why is my mousseline too firm?
Cold butter is firm, so refrigerated mousseline will also become firm. This is normal. Allow the cream to soften gradually before judging its final texture. Do not try to force a refrigerator-cold mousseline through delicate piping work and do not microwave it: local overheating can melt the butter and break the emulsion.
Can I make crème mousseline ahead?
Yes, but I prefer to think of it as a cream whose best working texture is freshly finished. The pastry-cream base can be prepared and chilled ahead. Once the mousseline is finished, keep it refrigerated for food safety and bring it back carefully to a workable temperature before re-whipping or piping.
For assembled pastries, storage time also depends on the other components. Fresh fruit, choux, laminated pastry and tart shells each change differently during refrigeration, so the shelf life of the finished dessert is not determined by the mousseline alone.
Can crème mousseline be frozen?
I do not use freezing as the default storage method for a finished mousseline when texture is important. Freezing and thawing can disturb the custard-and-butter emulsion and introduce water separation or graininess. For professional work, I prefer to prepare the pastry cream ahead and finish the mousseline close to assembly.
How I use mousseline in Paris-Brest
For a praline Paris-Brest, the cream is deliberately different from this neutral vanilla base. My documented house version uses 270 g pastry cream, 180 g butter and 90 g 60% almond praline. The praline contributes fat, solids, sweetness and flavour, so I treat that as a product-specific formula rather than pretending that every mousseline should have one universal butter ratio.
How I use mousseline in fraisier
Fraisier needs a cream that can support strawberries and hold a clean slice while still eating as a custard-based filling. Mousseline is particularly suited to that job. The exact firmness should be chosen for the construction, temperature and service style rather than by adding butter without purpose.
The temperature rule that matters most
If there is one practical rule to remember, it is this: before the final whipping, make the pastry-cream base and softened butter similar in temperature and texture. Around 20–22°C (68–72°F) is a useful target for this formula. The butter should bend and cream easily but should not look melted or greasy; the custard should be smooth, cool and no longer refrigerator-hard.
Once those conditions are right, mousseline is much less mysterious. It becomes what I want it to be: a smooth, elegant pastry cream with enough butter structure to pipe beautifully and enough custard character to still taste like a French cream rather than ordinary buttercream.
